3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

1 tablespoon olive oil
2 pounds ground turkey, 97/3
1 green pepper, diced small
1 medium onion, diced small
1 cloves garlic, minced
¼ teaspoon dried thyme
¼ teaspoon dried basil
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon Worcestershire sauce
1/2 cup ketchup, divided
⅓ cup chicken broth, low sodium
1 cup dry bread crumbs
2 eggs, lightly beaten

Steps:

  • Preheat oven to 375 degrees. Line a baking pan with foil and lightly spray with non-stick cooking spray.
  • Add the olive oil to a medium skillet. Saute the bell pepper, onion and the garlic until tender ( about 6 minutes). Stir in the thyme, basil, salt and the pepper and continue to saute for another minute. Add the Worcestershire sauce, ¼ cup of the ketchup and the chicken broth; stir until blended and set aside to cool. For faster cooling transfer mixture to a bowl. Mixture can still be warm when used, just not hot.
  • Meanwhile, in a large bowl, combine the ground turkey, eggs and the bread crumbs. Stir in the green pepper mixture a little at a time until well blended.
  • Put the mixture onto the prepared pan. Shape into a loaf about 9 to 10 inches in length. Add the remaining ketchup to the top. Bake for one hour or until the internal temperature reaches 165 degrees. Let stand for 10 minutes before slicing.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

1/4 cup tomato sauce or 1/4 cup ketchup
2 tablespoons olive oil
1 tablespoon Worcestershire sauce
1/4 cup sun-dried tomato packed in oil, chopped (optional)
1 (4 ounce) can mixed mushrooms, undrained (optional)
1 1/4 cups beef stock
1 tablespoon butter
2 tablespoons red wine
2 teaspoons flour
1 teaspoon tomato paste

Steps:

  • Preheat oven to 400.
  • Combine turkey, salt, sage, thyme and oregano.
  • Mix in the rest of the ingredients.
  • Put it in a loaf pan and bake for 45 minutes to an hour, till the top edges are nicely browned.
  • For optional gravy, combine stock, wine and tomato paste. Set aside. Cook butter and flour over low heat until it forms a paste. Raise the heat to medium and add the stock mixture, stirring frequently until it boils and thickens. Cook for about three minutes.

1 cup plain bread crumbs
1 cup minced onion
3 teaspoons minced garlic
¾ cup shredded carrots
½ cup fresh spinach (chopped)
⅓ cup shredded Mozzarella cheese
¼ cup ketchup
1 Tablespoon fresh parsley (chopped)
2 eggs
1 Tablespoon Worcestershire sauce
1¼ teaspoon salt
½ teaspoon pepper
¼ cup ketchup
2 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Add ground turkey, breadcrumbs, minced onion, garlic, carrots, spinach, Mozzarella cheese, ketchup, parsley, eggs, Worcestershire sauce, salt, and pepper into a large bowl.
  • Mix until everything is fully incorporated. (Sometimes clean hands work best for this step.)
  • Place in a loaf pan that has been sprayed with nonstick cooking spray, or line a sheet pan with parchment paper or aluminum foil and pour meat on the prepared pan then use your hands to form into a loaf shape, trying to keep it level so it cooks evenly.
  • Bake for 30 minutes.
  • While baking, mix glaze ingredients together. Remove meatloaf from oven and brush glaze over top.
  • Place back in the oven for another 30 minutes, or until internal temperature reaches 165 degrees F.
  • Remove and let cool for 10 minutes before serving. Sprinkle with chopped parsley to garnish if desired.
