2 boxes Betty Crocker™ Super Moist™ yellow or devil's food cake mix
Water, vegetable oil and eggs called for on cake mix boxes
Food colors (green, blue and yellow)
2 containers Betty Crocker™ Whipped or Rich & Creamy vanilla frosting
8 round vanilla wafer cookies
5 large and 2 small red gumdrops

3 round chewy caramels in milk chocolate, unwrapped
1/4 cup chocolate chips, melted
1/2 cup white vanilla baking chips, melted
Candy rocks
Small and large flower-shaped candy sprinkles

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray 2 (8-inch) round cake pans. Place paper baking cup in each of 24 regular-size muffin cups. Make, bake and cool 1 box cake mix as directed for 2 (8-inch) rounds. Make, bake and cool other box as directed for cupcakes. Reserve 3 cupcakes; save remaining cupcakes for another use. For easier handling, refrigerate or freeze cakes 30 minutes or until firm.
  • Stir green food color into 1 container frosting to make light green. On plate, place 1 cake layer, rounded side down. Spread with 1/2 cup light green frosting. Top with second cake layer, rounded side up. Spread thin layer light green frosting over cake to seal crumbs. Refrigerate or freeze 30 minutes.
  • Spread another layer light green frosting on cake; smooth with spatula. Stir green food color into 1/3 cup frosting to make dark green. Spoon into small plastic bag. Cut 1/4 inch off corner, and squeeze gently to draw grass, flower stems and bushes on cake.
  • Stir blue food color into 1/3 cup frosting to make blue. Spoon into small plastic bag. Cut 1/4 inch off corner, and squeeze gently to draw pond and river on cake.
  • Stir yellow food color into 3/4 cup frosting to make yellow. Remove baking cups from 2 cupcakes. Place 1 cupcake, rounded side down, on cake for fairy cottage. Spread 2 teaspoons yellow frosting on cupcake; top with another cupcake, rounded side up. Spread yellow frosting on top and sides of cupcake stack. Place 3 cookies on rounded top of cupcake, using remaining yellow frosting to stick them together. Place remaining cookies on cake as shown.
  • Press 2 large gumdrops together; on sugared surface, roll gumdrops with rolling pin to flatten. Cut out large circle for roof; place on top of cottage.
  • Spoon melted chocolate into small plastic bag. Cut 1/4 inch off corner; squeeze gently to draw door and windows on cottage.
  • To make gumdrop mushrooms, use melted white chips to attach 3 large gumdrops to round chewy caramels. Cut chewy chocolate candy in half crosswise; use white chips to stick 1 to base of each small gumdrop. Use melted white chips to draw dots on gumdrops and roof. Place on cake.
  • Decorate with candy rocks and sprinkles as shown. Spread remaining frosting on last reserved cupcake.

Yield 30

Number Of Ingredients 7

2 boxes Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix boxes
3 containers Betty Crocker™ Whipped fluffy white frosting
Neon pink food color
1 fashion doll (11 1/2 inches tall)
Pink decorating sugar
Edible pink pearls

Steps:

  • Heat oven to 325°F. Grease 1 1/2-quart ovenproof bowl (8 inches across top) and three 8-inch round cake pans with shortening; coat with flour (do not use cooking spray).
  • In large bowl, make cake batter as directed on boxes. (Both boxes of cake mix can be made at one time; do not make more than 2 boxes, and do not increase beating time.) Pour 3 1/4 cups batter into 1 1/2-quart bowl, and divide remaining batter among 3 pans (slightly less than 2 cups per pan).
  • Bake cake pans 23 to 30 minutes and bowl 47 to 53 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cakes from pans and bowl. Cool completely, about 1 hour. Top with second 8-inch cake; spread with 1/3 cup frosting. Repeat with third layer; top with larger bowl cake layer, cut side up. Spread with small amount of frosting. Top with rounded bowl cake layer, cut side down. Trim side of cake if necessary to make a tapered "skirt."
  • Spread thin layer of frosting over side and top of layered cake to seal in crumbs. Freeze cake 30 to 45 minutes to set frosting.
  • Spread frosting over cake as desired. Wrap hair and lower half of doll with plastic wrap. Insert doll into center of cake. Frost body of doll. Decorate with sprinkles and candy pearls as desired. Unwrap hair. Store cake loosely covered.

FAIRY CAKES

Perfect for a bake sale, kid's party or sweet afternoon snack, these iced cupcakes are the simplest sponges around and can be decorated as you like

Provided by Miriam Nice

Categories     Dessert, Snack, Treat

Time 37m

Yield makes 20-24

Number Of Ingredients 10

75g butter , softened
50ml vegetable oil
125g caster sugar
2 large eggs
125g self-raising flour
2 tbsp milk
1 tsp vanilla extract
250g icing sugar
food colouring (optional)
Your choice of sprinkles such as hundreds and thousands, sugar stars, berries or small sweets

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line 2 x 12 hole bun tins or mini muffin tins with paper cake cases. Put all the fairy cake ingredients into a large bowl and whisk together with electric hand beaters until smooth. If you don't have these you can use a wooden spoon or balloon whisk (see tip).
  • Dollop the mixture into the prepared cases until it's all used up. Bake for 10-12 mins or until golden and springy. To be sure they're cooked through, poke a cocktail stick into the centre of one of the cakes in a middle row - if it comes out cleanly, it's cooked. Leave to cool in the tin for 5-10mins then transfer to a wire rack to cool completely before decorating.
  • Mix the icing sugar with enough water to make it the consistency of thick cream. Colour some or all of the icing with a few drops of your chosen food colouring(s) then drizzle over the top of the cooled fairy cakes. Sprinkle with your chosen toppings while the icing is still wet. Leave to set firm before serving. Will keep for 2 days in an airtight container.

Tips:

  • Mise en Place: Before you start baking, measure and prepare all your ingredients and equipment. This will help you stay organized and ensure that you have everything you need.
  • Use Fresh Ingredients: The quality of your ingredients will greatly impact the taste of your cake. Whenever possible, use fresh fruits, vegetables, and dairy products.
  • Follow the Recipe Carefully: Baking is a science, so it's important to follow the recipe precisely. If you substitute ingredients or change the measurements, you may end up with a cake that doesn't turn out as expected.
  • Don't Overmix the Batter: Overmixing can make your cake tough and dense. Mix the batter until just combined, then stop.
  • Bake the Cake at the Correct Temperature: The temperature of your oven is critical for baking a successful cake. Make sure your oven is preheated to the correct temperature before you start baking.
  • Let the Cake Cool Completely: Before you frost or decorate your cake, let it cool completely. This will help prevent the frosting from melting or sliding off.

Conclusion:

With a little practice, you can master the art of baking a fairy garden cake. These cakes are a beautiful and delicious way to celebrate any occasion. Just remember to follow the tips above, and you'll be sure to impress your friends and family with your culinary skills.
