GREEN GODDESS DRESSING

Green Goddess Dressing image

Green Goddess is a California classic. It makes a great dip for crudités and a wonderful dressing for robust lettuces like romaine hearts, but it's too thick and intense for delicate spring mixes. Although I've made the anchovies optional, I recommend them because they add depth to the flavor. If salt is an issue for you, leave them out.

Is it a dressing or a dip? Who cares? Green goddess dressing, the beloved California creation, doubles as a dip for a summertime crudite platter. The creamy concoction is studded with chopped fresh herbs and scallions, and it pairs particularly well with the season's bounty -- here, baby carrots and yellow squash, tender peas and beans, and little tomatoes -- but let the greenmarket (or your own garden) be your guide. This recipe originally appeared inMartha Stewart's Appetizers (Clarkson Potter).

¼ cup chopped fresh parsley

Tips:

  • Choose a variety of vegetables. A mix of colors and textures will make your crudite platter more visually appealing and more fun to eat. Some good options include carrots, celery, cucumbers, radishes, bell peppers, and broccoli.
  • Cut the vegetables into uniform pieces. This will help them cook evenly and make them easier to dip.
  • Blanch the vegetables. Blanching is a quick way to cook the vegetables without losing their nutrients or flavor. To blanch vegetables, bring a pot of water to a boil, add the vegetables, and cook for 1-2 minutes. Then, immediately remove the vegetables from the pot and place them in a bowl of ice water to stop the cooking process.
  • Make the green goddess dressing. This creamy, tangy dressing is the perfect complement to the crudite platter. To make the dressing, simply combine mayonnaise, sour cream, green onions, parsley, tarragon, dill, lemon juice, salt, and pepper in a food processor or blender and blend until smooth.
  • Assemble the crudite platter. Arrange the blanched vegetables on a platter and drizzle with the green goddess dressing. Serve immediately.

Conclusion:

This fall crudite platter with green goddess dressing is a healthy and delicious appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to get your kids to eat their vegetables. With its variety of colorful vegetables and creamy, tangy dressing, this crudite platter is sure to be a hit. So next time you're looking for a healthy and easy snack or appetizer, give this fall crudite platter a try.
