Boredom is one of my problems, so I play around and come up with different ways to cook the same vegetables that we like. This is one of our favorites.

cooking spray
¼ cup butter, melted
1 ½ pounds okra, cut into 1-inch pieces
3 ears fresh corn kernels
1 large sweet onion, chopped
1 clove garlic, minced
¼ cup half-and-half
salt and ground black pepper to taste

Steps:

  • Spray a large skillet with cooking spray. Add butter and melt over medium-high heat. Add okra, corn, and onion; saute until barely tender, 3 to 5 minutes. Add garlic and continue to saute until all vegetables are tender, about 5 minutes more. Lower heat and add half-and-half; stir until combined. Season with salt and pepper.

1 cup chopped green pepper
1/2 cup chopped onion
3 tablespoons canola oil
2 cups fresh or frozen corn or 1 can (15-1/4 ounces) whole-kernel corn
1-1/2 cups sliced fresh or frozen okra
3 medium tomatoes, peeled and chopped (1-1/2 cups)
1 tablespoon tomato paste
1/4 teaspoon dried thyme
Salt to taste
1/4 teaspoon coarsely ground pepper
1/2 teaspoon hot pepper sauce, optional

Steps:

  • In a large skillet, saute green pepper and onion in oil until tender. Add corn and okra; cook over medium heat for 10 minutes, stirring occasionally. , Stir in the tomatoes, tomato paste, thyme, salt, pepper and, if desired, pepper sauce.
