Steps:
- The rice should be smoothed out to get rid of any lumps.
- Day old, cold rice works best.
- If using eggs (recommended), lightly beat them with a pinch of salt.
- Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
- Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
- After the eggs set up a little, lightly scramble them so you have medium small pieces.
- Remove eggs to a bowl.
- Wipe out wok.
- If adding raw shrimp, heat a little more oil and stir fry them to just cook.
- Remove to a bowl.
- Wipe out wok again.
- Heat a little more oil.
- Add the onions& stir fry until they start to darken.
- Stir in the rice, breaking up any lumps you missed.
- Drizzle a little dry sherry down the sides of the wok.
- (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
- If you want the rice to look brown, drizzle in a little light soy sauce.
- Stir in all of the other ingredients and season to taste with salt and white pepper.
- Continue to stir and cook until heated through.

HAM FRIED RICE
My husband and I lived in Japan for a few years and came to love that country's ethnic dishes. This dish captures the Asian flavor better than any other recipes I've tried.

Tips:
- Choose the right ham. For the best flavor and texture, use a bone-in ham steak or slice of cooked ham. Avoid using pre-packaged, deli ham as it will not provide the same flavor or texture.
- Cook the ham properly. To ensure that the ham is cooked through, cook it over medium heat until it reaches an internal temperature of 140 degrees Fahrenheit. If you are using a bone-in ham steak, cook it for 10-12 minutes per side. If you are using a slice of cooked ham, cook it for 5-7 minutes per side.
- Use day-old rice. Day-old rice is less sticky than freshly cooked rice, which will help to prevent the fried rice from becoming gummy. If you do not have day-old rice, you can spread the freshly cooked rice out on a baking sheet and let it cool completely before using it.
- Use a well-seasoned wok or skillet. A well-seasoned wok or skillet will help to prevent the rice from sticking. If you do not have a well-seasoned wok or skillet, you can season it by rubbing it with a little oil and heating it over medium heat for a few minutes. Allow the wok or skillet to cool completely before using it.
- Add the ingredients in the correct order. The order in which you add the ingredients to the wok or skillet is important. Always start by adding the oil and then the eggs. Once the eggs are cooked, add the ham and vegetables. Finally, add the rice and soy sauce.
Conclusion:
Ham fried rice is a quick and easy meal that is perfect for busy weeknights. It is also a great way to use up leftover ham. With a few simple tips, you can make ham fried rice that is flavorful, fluffy, and delicious. So next time you are looking for a quick and easy meal, give ham fried rice a try.
