This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

Number Of Ingredients 8

1 lb ground beef
2 eggs
salt (to taste)
pepper (to taste)
1 onion, chopped (Optional, I usually omit it or use a teaspoon of dried minced onion. You also don't need the whole o)
2 -3 tablespoons ketchup, heaping
1 tablespoon yellow mustard, heaping
1 cup saltine crumbs, crushed. (This is usually most of one sleeve of saltines.)

Steps:

  • Mix all together; I generally use my hands.
  • Form mixture into a loaf shape.
  • Put in a baking dish (I use a pie plate).
  • Bake at 350 for 1 hour.
  • NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

BEV'S FAMOUS MEATLOAF

Found this in Southern Living and it was the first meatloaf I ever made that did not fall apart. It makes a huge one so be prepared for many leflovers if you have an average size family.

2 lbs lean ground beef
1 lb ground pork sausage
18 saltine crackers, crushed fine
1/2 medium onion, finely chopped
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1/2 cup brown sugar, divided
1/2 cup ketchup

Steps:

  • Preheat oven to 350 degrees.
  • Combine first 7 ingredients and 1/4 cup brown sugar in a medium bowl until just blended.
  • Place mixture in lightly greased 11x7 baking dish. Shape into a 10x5 loaf.
  • Bake for 1 hour.
  • Remove from oven and drain.
  • Stir together ketchup and 1/4 cup brown sugar. Pour over meatloaf.
  • Bake 15 minutes more or until thermometer reads 160 degrees.
  • Remove and let stand for 20 minutes before slicing.

MOM'S FAMOUS MEATLOAF

Yeah, I know...there's tons of meatloaf recipes out there, but I bet this is one of the easiest ones with lots of taste out there! I got this from a Kraft recipe booklet I got in the mail that I've tweaked a bit and it's pretty simple yet yummy.

2 lbs ground beef
1 (6 ounce) package chicken flavor stuffing mix
1 cup water
2 eggs, beaten
1/2 cup barbecue sauce

Steps:

  • Heat oven to 375 degrees.
  • In bowl, mix all ingredients except for 1/4 cup of the BBQ sauce. I use Sweet Baby Ray's.
  • Line glass cake pan with tin foil.
  • Put meat mixture into pan and shape into a loaf.
  • Cover loaf with rest of BBQ sauce.
  • Bake for 1.5 hours or until there's an internal temperature of 160 degrees.
  • I usually make this and freeze it for members of my church who are sick and need help with cooking, so if it is frozen, it will need to be put in the oven (about the same temp.) for around 30-40 minute.

2 slices white bread (crumbled)
1/4 cup whole milk
1 egg
2 tablespoons instant minced onion
salt and pepper
3/4 cup ketchup
1/2 cup water

Steps:

  • Mix crumbled bread with milk and let sit till all moisture is absorbed.
  • Beat egg and add to bread mixture.
  • Mix in minced onion.
  • Add ketchup and meat gradually to blend all together. Season with salt and pepper.
  • Do not overmix and it will become too dense.
  • Lightly mixing keeps it moist and juicey.
  • Form into a meatloaf shape and place in 9x13 baking pan. Pour water around meatloaf and bake at 350 degrees for 45 minutes
  • The water will cook away and you will have nicely browned and moist meatloaf.

1 1/2-2 lbs ground chuck or 1 1/2-2 lbs ground round
3/4-1 cup oatmeal
1 egg
1/2 small onion, finely chopped
1/2 small bell pepper, finely chopped
1/4 cup ketchup
1/4 cup Dale's Steak Seasoning (soy sauce or Worcestershire sauce also works)
1 teaspoon Tony Chachere's Seasoning (Season All also works)
1/2 teaspoon salt
1/2 teaspoon black pepper

  • 1. Preheat oven to 325 degrees.
  • 2. Mix all ingredients by hand in a large bowl until the egg is no longer visible.

1 cup white bread cubes
1/4 cup milk

Steps:

  • Preheat oven to 350°F degrees. In a large bowl, combine bread cubes, milk, and egg, using a fork to break up the bread cubes. Add onions, salt, and pepper, and mix well. Add ground beef, incorporating the egg mixture and onion with a fork or hands. On a parchment-lined baking sheet, place half the beef mixture on the sheet and shape into a 4.5-inch by 9.5 inch rectangle. Top the beef with 10 pickles and 3 cheese slices. Add the remaining beef mixture on top of the pickles and cheese, smoothing with a fork or hands and sealing the sides to prevent the cheese from melting out. Bake in a preheated oven for 1 hour and 10 minutes (or until inserted meat thermometer reads 165F degrees). Once the meatloaf reaches the desired internal temperature, add the remaining pickles slices and American cheese to the top of the loaf and bake an additional 3-4 minutes or until the cheese is melted.
