3/4 cup Parmesan cheese shavings (about 1.5 ounces)*
1 small shallot
8 cups (5 ounces) baby arugula (do not use standard arugula, usually sold in bunches)
3 tablespoons extra virgin olive oil
1/4 teaspoon kosher salt, plus more to taste
1 1/2 tablespoons lemon juice + zest of 1/2 lemon

Steps:

  • If necessary, shave the Parmesan cheese with a vegetable peeler. Thinly slice shallot.
  • In large bowl, place the baby arugula, olive oil, lemon zest (optional), lemon juice, and kosher salt. Use your hands to toss everything so it's evenly coated. Add the Parmesan shavings and shallot and toss for a few seconds until combined. Taste and add additional salt if desired.

1/2 cup seasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon ground ginger
1 cup cooked chicken, chopped
4 cups cabbage, shredded
1 carrot, shredded
2 green onions, sliced
2 tablespoons sesame seeds, toasted

Steps:

  • Combine vinegar, soy sauce and ground ginger.
  • Add chicken and marinate for 15 to 30 minutes.
  • In salad bowl, combine remaining ingredients.
  • Just before serving, remove chicken from marinade, reserve.
  • Pour marinade into cabbage mixture; toss.
  • Top with chicken.

2 star fruit
2 tablespoons fresh lime juice
8 ounces lychees
2 tablespoons caster sugar
8 kumquats
1 tablespoon Pernod
2 kiwi fruits
1 mango

Steps:

  • Trim along the lengths of all the points on the star fruit, slice thinly and remove any pips with the point of a knife. Peel and stone the lychees. Slice the kumquats. Peel and slice the kiwi fruit. Peel, stone and chop the mango.
  • Mix together all the fruits in a bowl. Sprinkle over the lime juice, sugar and Pernod and stir well. Chill for at least 1 hour before serving.

3 tablespoons confectioners' sugar
44 ounces mandarin orange sections, canned, drained
12 ounces coconut gel, drained & rinsed
3 cups pineapple, drained if canned
2 cups shredded sweetened coconut
1 1/2 cups macadamia nuts, chopped roasted canned

Steps:

  • Whip cream with confectioner's sugar in large chilled bowl.
  • Mix next 4 ingredients & fold into whipped cream.
  • Chill thoroughly, at least an hour; confectioner's sugar helps stabilize whipped cream. If planning to keep overnight, stabilize whipped cream with gelatin.
  • Stir in nuts just before serving.
