1 pinch salt
1 tablespoon unsalted butter
1 large finely chopped onion
1 cup reduced-fat sour cream
200 g thinly sliced smoked salmon
100 g red caviar
100 ml vodka

  • In a large, deep skillet, melt the butter over moderate heat, Gently sauté the onions until it becomes very soft and transparent (about 10 minutes).

1/2 ounce pine nuts, toasted
10 ounces pitted black Kalamata olives (blanch briefly in boiling water and drain)

3 ounces grated Parmesan
1 1/4 pounds farfalle (bowtie pasta)
1 tablespoon olive oil

12 ounces farfalle pasta (or pasta of your choice)
8 ounces smoked salmon, cut into julienne strips
2 garlic cloves, finely minced
3 tablespoons butter
2 tablespoons vodka
1 1/2 cups half-and-half cream
4 ounces low-fat cream cheese
1/4 teaspoon freshly-cracked black pepper (or more)
freshly-grated parmigiano-reggiano cheese

Steps:

  • Cook the pasta in lots of boiling, salted water until dente. Drain and set aside.
  • In a large skillet, saute garlic in butter over medium heat for 2 minutes, careful not to let the garlic brown or burn. Add vodka and cook a further minute or so for alcohol to evaporate. Juice and finely grated zest of 2 lemons
1 package (10 ounces) frozen peas, defrosted

1/4 cup chopped fresh mint, plus more for serving
