6 tablespoons blanched hazelnuts
2 cups broccoli florets
1 (12 ounce) package farfalle pasta
1 ½ cups lightly packed fresh parsley leaves
½ cup fresh mint leaves
¼ cup olive oil
2 tablespoons olive oil
5 large cloves garlic, peeled
4 teaspoons lemon juice
1 ½ teaspoons lemon zest

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 10

2 cloves garlic, peeled and crushed
Sea salt
3 tablespoons pine nuts
1 cup fresh basil leaves
1/3 cup extra-virgin olive oil
1/4 cup freshly grated Parmesan cheese
Freshly ground pepper to taste

  • With a mortar and pestle, crush the garlic with a teaspoon of salt. Add the pine nuts and gradually add the basil and the oil, a little at a time. Grind until the ingredients have been reduced to a paste (this may also be done in a blender or food processor). Add the grated cheese and pepper and mix well.
  • Bring six quarts of salted water to a roiling boil. Add the potatoes and the farfalle and cook together for about five minutes. Add the beans. Cook until the farfalle is al dente, and drain.

Tips:

  • Choose the right pasta. Farfalle, also known as bow-tie pasta, is a great choice for this recipe because it holds the pesto sauce well. Other good options include penne, rotini, and fusilli.
  • Make your own pesto. Fresh pesto is always best, and it's easy to make at home. Simply combine fresh basil, pine nuts, Parmesan cheese, garlic, olive oil, and salt and pepper to taste in a food processor or blender until smooth.
  • Use high-quality ingredients. The better the ingredients you use, the better your dish will taste. Look for fresh, flavorful vegetables, and high-quality olive oil and Parmesan cheese.
  • Don't overcook the pasta. Pasta should be cooked al dente, which means it should be tender but still have a slight bite to it.
  • Toss the pasta with the pesto immediately after draining. This will help the pesto evenly coat the pasta and prevent it from sticking together.
  • Add some vegetables to the pasta. Vegetables like broccoli, asparagus, or zucchini can add color, flavor, and nutrients to your dish.
  • Serve the pasta with additional pesto, Parmesan cheese, and basil. This will allow your guests to customize their dish to their own taste.

Conclusion:

Farfalle with pesto is a delicious and easy-to-make dish that is perfect for a weeknight meal or a casual lunch. With its vibrant green color and fresh, flavorful taste, this pasta dish is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give farfalle with pesto a try.
