  • Prepare a stove-top griddle or an outdoor grill.

2 cups halved and thinly sliced kirby cucumbers
1/4 cup thinly sliced shallot
2 tablespoons extra-virgin olive oil, plus more for brushing

2 tablespoons low-fat sour cream, optional
