When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1/2 cup dry breadcrumbs
1/2 cup milk
2 lbs lean ground beef
1 egg, slightly beaten
1/4 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sage
3 tablespoons brown sugar
1/4 cup ketchup
1/4 teaspoon nutmeg
1 teaspoon dry mustard

Steps:

  • Soak bread crumbs in milk.
  • Add remaining ingredients, pack lightly into greased loaf pan.
  • Bake at 350 degrees for 1 hour.
  • Combine sauce ingredients in small bowl, spread over top of meat loaf.
  • Bake an additional 45 minutes.

4 pounds ground beef
1 large green pepper, diced
1 large onion, diced
3 eggs
1 1/2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 cup cracker crumbs
Ketchup, as needed

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine all ingredients except ketchup. Knead mixture and place into a loaf pan. In a large shallow pan, add 1-inch of water, place the meatloaf pan in the center and cover with foil. Bake for approximately 1 hour.
  • Drain water, remove foil, cover meatloaf with ketchup and bake for another 10 to 15 minutes.

Based on a recipe from Fanny Farmers American Cook Book, but with a twist. We have this with mashed potatoes and green beans or a green salad and a potato salad. I vary the meats by using minced lamb or a mixture of 1lb minced beef and 1lb minced lamb.

2 lbs minced beef
1 (100 g) packet seasoned stuffing mix (I use Shropshire brand Celery and Walnut)
1 1/2 teaspoons dried mustard
1 1/2 teaspoons salt
good grinding black pepper
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
2 tablespoons of somerset red onion marmalade (Somerset Red Onion Marmalade #1)
milk

Steps:

  • Mix every thing together with your hands, adding enough milk to make a good consistency.
  • Leave for 10 minutes and mix again. You may need to add a little more milk as the stuffing mix will have absorbed the liquid and you don't want a dry meatloaf.
  • Grease a 2lb loaf tin and put the mixture into it patting down well and smoothing the top.
  • Bake in a medium hot oven for about an hour.
  • Remove from the oven and pour off any excess fat.
  • Leave to rest for 10 minutes before slicing.
