Categories     dessert

Time 1h10m

Yield 12 servings

Number Of Ingredients 16

Nonstick cooking spray, for spraying liners
4 cups half-and-half
2 cups packed dark brown sugar
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
Pinch of salt
6 large eggs, lightly beaten
2 cups chopped pecans
2 sticks unsalted butter, melted
12 slices stale cinnamon-raisin bread, torn into 1-inch pieces
1 cup apple cider
1 cup bourbon
1/2 cup packed light brown sugar
4 tablespoons unsalted butter
1 tablespoon fresh lemon juice
Pinch of salt

Steps:

  • For the bread pudding cups: Preheat the oven to 350 degrees F. Prepare a muffin tin with paper liners and spray the liners with nonstick cooking spray. (Alternatively, spray the insides of twelve 2-ounce ramekins with nonstick spray.)
  • In a large bowl, whisk together the half-and-half, brown sugar, cinnamon, vanilla, salt and eggs. Add in the pecans, butter and bread and stir to coat. Let the mixture sit for 10 minutes.
  • Carefully fill the muffin tins about two-thirds of the way up with the bread pudding mixture. Cook until the puddings set, about 25 minutes.
  • For the bourbon sauce: In the meantime, add the cider, bourbon, brown sugar, butter, lemon juice and salt to a saucepan over medium heat and bring to a simmer. Simmer until the sauce reduces by one-half, about 10 minutes.
  • Remove the bread puddings from the oven and let cool for 10 minutes. While still warm, use a skewer to poke a few holes into each pudding and pour in a couple of tablespoons of sauce. Serve immediately.

FRENCH BREAD PUDDING

Provided by Food Network

Time 50m

Yield 6 servings

Number Of Ingredients 15

1 cup sugar
8 Tbs. butter, softened (1 stick)
5 eggs, beaten
1 pint heavy cream (2 cups)
dash of cinnamon
1 Tbs. vanilla extract
1/4-cup raisins
12 slices of fresh or stale French bread, 1-inch thick
1 cup sugar
1 cup heavy cream or canned evaporated milk
1 cinnamon stick or dash of ground cinnamon
1 Tbs. unsalted butter or margarine
1/2-tsp. cornstarch
1 Tbs. bourbon
1/4-cup additional water

Steps:

  • Preheat oven to 350 degrees F. In a large bowl, cream together sugar and butter. Add eggs, cream, cinnamon, vanilla, and raisins, mixing well. Pour into a 9-inch square pan 1-3/4 inches deep. Arrange bread slices flat in the egg mixture and let stand for 5 minutes to soak up the liquid. Turn bread over and let stand for 10 minutes longer, then push it down so it is covered by the egg mixture (do not break bread). Set pan in larger pan filled with water to 1/2-inch from top and cover with aluminum foil. Bake for 45-50 minutes, uncovering pudding for the last 10 minutes to brown the top. When done, custard should be soft, not firm.
  • BOURBON SAUCE: Combine sugar, cream/evaporated milk, cinnamon, and butter/margarine in a sauce pan. Bring to a boil. Add cornstarch mixed with 1/4-cup water. Cook, stirring, until sauce is clear. Remove from heat and stir in whiskey.

Irish soda bread:
2 cups all-purpose flour, plus more for dusting
3/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon caraway seeds
1 cup well-shaken buttermilk
2 tablespoons unsalted butter, melted
Puddings:
3 ounces sharp white Cheddar cheese, coarsely grated (1 1/4 cups)
1/4 cup grated Parmigiano-Reggiano
4 large eggs
2 1/2 cups whole milk
Special Equipment
8 (6-ounce) ramekins or a 2-quart shallow gratin or baking dish

Steps:

  • Make soda bread:
  • Preheat oven to 375°F with rack in middle.
  • Whisk together flour, baking soda, salt, and caraway in a large bowl. Add buttermilk and butter. Stir just until dough is evenly moistened but still lumpy.
  • Transfer dough to a well-floured surface and turn dough to coat with flour. Gently knead with floured hands about 8 times to form a soft but slightly less sticky dough.
  • Form into a domed 6-inch round and put on an ungreased baking sheet. Cut a 1/2-inch-deep "X" across top of each loaf with a sharp knife. Using a small sieve, dust 1 tablespoon of additional flour over loaf.
  • Bake in middle of oven until golden brown and bottom sounds hollow when tapped, 35 to 40 minutes. Transfer loaf to a rack and cool completely.
  • Make puddings:
  • Preheat oven to 350°F with rack in middle. Butter ramekins or baking dish.

  • Whisk together eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir in cheese and spoon over bread in ramekins or baking dish. Let stand 10 minutes.
  • Put ramekins or baking dish in a larger baking pan and add enough hot water to come halfway up sides of ramekins or dish.
  • Bake until just set and a knife inserted in center comes out clean, about 35 minutes.
  • Transfer ramekins or dish from hot water bath to a rack and cool 20 minutes before serving.

Categories     Yeast Breads

Time 2h25m

Yield 4 loaves

2 (1/4 ounce) packets yeast
1 cup warm water
2 tablespoons salt
1/4 cup sugar
6 tablespoons shortening
3 1/3 cups warm water
10 -12 cups flour

Steps:

  • Dissolve yeast and 1 cup warm water in a large mixing bowl. Let rest 10-15 minutes.
  • Add salt, sugar, shortening and 3 1/3 cups warm water.
  • Gradually mix in 10 cups of flour. Add up to 2 more cups until dough is no longer sticky.
  • Knead for 10 minutes. Cover the bowl and let rise for 1 hour until dough doubles in size.

  • Place in preheated oven at 375 degrees and bake until golden brown (about 35 Minutes).
  • This recipe also works well halfed.
  • For whole wheat bread, substitute 4 cups of whole wheat flour mixed with 6 to 8 cups of white flour.
  • I cool slice and freeze the extra laoves for later.

Tips:

  • Use stale or day-old bread for a firmer texture.
  • If you don't have stale bread, you can toast fresh bread in the oven at 350 degrees Fahrenheit for 5-10 minutes.
  • Use a variety of breads for a more complex flavor. For example, you could use a combination of white bread, wheat bread, and sourdough bread.
  • Soak the bread in the milk mixture for at least 30 minutes, or up to overnight. This will help the bread to absorb the liquid and become soft.
  • Add in your favorite mix-ins, such as raisins, nuts, chocolate chips, or dried fruit.
  • Bake the bread pudding in a preheated oven at 350 degrees Fahrenheit for 45-60 minutes, or until it is golden brown and a toothpick inserted into the center comes out clean.
  • Serve the bread pudding warm or at room temperature.

Bread pudding is a delicious and versatile dessert that can be made with a variety of ingredients. It is a great way to use up stale bread and it is also a relatively inexpensive dessert to make. Bread pudding can be served warm or at room temperature, and it can be topped with a variety of sauces, such as vanilla sauce, caramel sauce, or chocolate sauce. Whether you are looking for a quick and easy dessert or a more elaborate dish, bread pudding is a great option.
