4 cups shredded zucchini
¾ cup water
¾ teaspoon salt
½ teaspoon basil
2 cups warm milk
3 tablespoons all-purpose flour
½ teaspoon salt
3 tablespoons butter
2 tablespoons minced onion
ground black pepper to taste

Steps:

  • Stir zucchini, water, salt, and basil together in a pot; bring to a boil, reduce heat to medium-low, and simmer until zucchini is tender, about 15 minutes.

1 tbsp butter
3 garlic cloves (roughly chopped )
1 onion (finely chopped )
1 kg (2lbs) zucchini (chopped )
2 tbsp fresh basil
2 cups stock/broth
2 cups baby spinach
1 cup cream
salt and pepper (to taste)
Parmesan cheese (to serve)

Steps:

  • In a pot set over medium heat, melt the butter.
  • Add the onion and garlic and sauté for 5 minutes until soft and translucent.
  • Add the zucchini and basil then season with salt and pepper. Cook, stirring regularly, until the zucchini starts to soften.

1 large onion, chopped (or 2 medium onions)
2 (8 ounce) cans vegetable broth
3 garlic cloves
4 teaspoons cumin

1 teaspoon ground cardamom
1/2 teaspoon cayenne pepper
