1/8 teaspoon fresh ground black pepper
1/2 teaspoon chives, for garnish (chopped fresh or dried)
3 tablespoons unsalted butter

Steps:

  • Set a stockpot of water to boil over high heat.
  • Clean and cut cauliflower into small pieces.
  • Cook in boiling water for about 6 minutes, or until well done.
  • Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

4 teaspoons red-wine vinegar
4 teaspoons fresh lemon juice
4 teaspoons grainy mustard
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 cup finely chopped celery stalks, plus 1/4 cup chopped celery leaves
1 pound cauliflower, cut into bite-size florets (3 cups)
