Steps:
- Put all ingredients (except chicken) into a bowl and whisk until fluffy.
- Put the raw chicken into a large dish and pour the marinade over the butchered chicken.
- Move chicken around to make sure all of the raw chicken is all covered in the marinade.
- Cover with plastic wrap and refrigerate for 12 hours.
- Drain marinaded chicken in a large strainer.
- Place chicken in the tapioca flour and toss it around to cover the whole piece of chicken.
- Let the chicken rest 2-3 minutes on a baking pan.
- Gently heat oil in a pre-seasoned cast iron skillet. If you have a deep fryer, that is great! I would use that instead. The oil should be 350-375 F degrees before adding the chicken pieces.
- Fry the chicken for 10 minutes on one side. Flip the chicken to cook the other side another 10 minutes. (Do this if you are not fully submerging your chicken in the hot oil. After you cook each side of the chicken, check the internal temperature of 165 F degrees. The total cook time would be around 20 minutes, but it depends on the cut of chicken you are using. If you are deep frying the chicken it will take less time for your chicken to cook.
- Season the chicken with salt and pepper.

- Bake uncovered until crisp and golden - approx 40-45 minutes.
CHARLES' COUNTRY PAN FRIED CHICKEN
Steps:
- In a bowl or resealable plastic bag, season the chicken with 1 tablespoon salt, 1/2 teaspoon pepper and the garlic powder. Cover or seal and refrigerate overnight or up to 24 hours.
- Pour 1/2 to 1 inch of oil into a deep 12-inch cast-iron skillet and heat until a pinch of flour sizzles upon contact (about 360 degrees F). Set a wire rack on top of a rimmed baking sheet and set aside. In a bowl, whisk together the milk and eggs. Place the flour in a separate bowl. Dip the chicken in the egg wash, drain off the excess, then dredge in the flour, shaking off the excess.
- Working in batches, place the chicken skin-side down in the skillet and fry for 3 minutes without moving. Continue to fry, turning the chicken every 1 to 2 minutes to ensure even browning and cooking, until the chicken is cooked through, 11 to 15 minutes. Drain on the rack and serve hot, warm or at room temperature.

Tips:
- Choose the right chicken: Use fresh, air-chilled chicken for the best results. Avoid using frozen chicken, as it can result in soggy breading.
- Brine the chicken: Brining the chicken helps to keep it moist and flavorful. You can use a simple brine made with water, salt, and sugar, or you can add herbs and spices to taste.
- Use a buttermilk marinade: Buttermilk helps to tenderize the chicken and adds a delicious tangy flavor. You can also use yogurt or kefir as a substitute for buttermilk.
- Season the flour mixture well: The flour mixture is what gives the chicken its flavor, so be sure to season it well with salt, pepper, and your favorite herbs and spices.
- Double-coat the chicken: Double-coating the chicken helps to ensure that the breading stays on and doesn't fall off during frying.
- Fry the chicken at the right temperature: The ideal temperature for frying chicken is between 350°F and 375°F. If the oil is too hot, the chicken will cook too quickly and the breading will burn. If the oil is too cool, the chicken will absorb too much oil and become greasy.
- Don't overcrowd the pan: When frying the chicken, don't overcrowd the pan. This will cause the oil temperature to drop and the chicken will not cook evenly.
- Let the chicken rest before serving: Once the chicken is fried, let it rest for a few minutes before serving. This will help the juices to redistribute and the chicken will be more tender and flavorful.
Conclusion:
Fried chicken is a delicious and versatile dish that can be enjoyed by people of all ages. By following these tips, you can make fried chicken at home that is crispy on the outside and juicy on the inside. Serve it with your favorite sides, such as mashed potatoes, coleslaw, or french fries, for a complete meal.
