SWEET-POTATO STEW

Sweet-Potato Stew image

Many vegan dishes (like fruit salad and peanut butter and jelly) are already beloved, but the problem faced by many of us is in imagining less-traditional dishes that are interesting and not challenging. Here are some more creative options to try.

Provided by Mark Bittman

Categories     dinner, soups and stews, appetizer

Time 15m

Number Of Ingredients 9

Sweet potatoes
Apples
Onions
Coconut milk
Chilis (dried or fresh)
Ginger
Vegetable stock or water
Peanuts
Cilantro

Steps:

  • Saute 1 pound cubed sweet potatoes, a peeled and cubed apple, chopped onion, minced chili (dried or fresh) and minced ginger, along with a sprinkle of curry powder in a large saucepan until the onion is soft, 5 or 6 minutes.
  • Add coconut milk thinned with vegetable stock or water to about halfway up the sides of the mixture; cook until soft, then mash about half of the mixture.
  • Garnish with chopped peanuts and cilantro and serve.

Tips:

  • Use a variety of sweet potatoes: Different types of sweet potatoes offer various flavors and textures. Mixing them adds complexity to the stew.
  • Roast the sweet potatoes before adding them to the stew: Roasting intensifies their natural sweetness and gives them a slightly caramelized flavor.
  • Don't overcrowd the pot: If you add too many vegetables to the pot, they won't cook evenly. Cook them in batches if necessary.
  • Use a flavorful broth: The broth is the base of the stew, so make sure it's flavorful. You can use vegetable broth, chicken broth, or even a combination of both.
  • Add some greens: Greens like kale or spinach add color, nutrients, and a slightly bitter flavor that balances the sweetness of the sweet potatoes.
  • Season to taste: Don't be afraid to taste the stew as it cooks and adjust the seasonings accordingly. You may want to add more salt, pepper, or herbs.

Conclusion:

Sweet potato stew is a delicious, hearty, and nutritious meal that's perfect for a cold day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and satisfying meal, give sweet potato stew a try.
