PROSCIUTTO-WRAPPED VEGETABLES WITH PARMESAN

Prosciutto-Wrapped Vegetables with Parmesan image

It's time to reinvent the crudité platter, and I nominate these attractive little bundles of vegetables; they're great with cocktails for entertaining as an alternative to a boring deli plate, but they are also a nice alternative to a salad with a pasta dinner. My friends request this often.

Yield 4 to 6 servings

Number Of Ingredients 8

6 broccolini stalks
6 small cauliflower florets with stems
15 paper-thin slices prosciutto
1/2 fennel bulb, trimmed, cored, and thinly sliced lengthwise
1/2 orange bell pepper, cored, seeded, and cut lengthwise into thin strips
1/2 red bell pepper, cored, seeded, and cut lengthwise into thin strips
2-ounce piece of Parmesan cheese
2 tablespoons Meyer lemon olive oil

Steps:

  • Bring a medium pot of salted water to a boil over high heat. Place a large bowl of ice water near the stove. Cook the broccolini in the boiling water for 1 minute, then use a slotted spoon to transfer it to the bowl of ice water. Let cool for 2 minutes, then drain on a towel and reserve. Cook the cauliflower in the boiling water for 3 minutes, then cool in the ice water and drain as for the broccolini.
  • Working with 1 slice at a time, cut the prosciutto slices in half lengthwise. Make a small bundle of fennel slices and wrap it with prosciutto, allowing the fennel to extend out the ends. Bundle together 2 strips each of orange and red bell peppers and wrap them with prosciutto in the same way. Wrap prosciutto strips around the stalks of broccolini and the stem ends of the cauliflower florets.
  • Using a vegetable peeler, shave the Parmesan cheese onto a large platter or serving plates; arrange the vegetable bundles over the cheese shavings. Drizzle the oil over the bundles.

FRUIT AND PROSCIUTTO

Fruit and Prosciutto image

This classic no-cook appetizer is a simple yet elegant summer offering that can be varied using whichever fruits are ripe and tempting at the market. When preparing the melon, use a wooden spoon to remove the seeds; it is much gentler on the tender flesh than metal.

Time 1h10m

Yield 6

Number Of Ingredients 13

2 tablespoons olive oil, divided
2 shallots, chopped
1 clove garlic, minced
1 teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
¾ cup soft goat cheese
½ cup shredded mozzarella cheese
½ (8 ounce) package cream cheese
6 figs, chopped
1 tablespoon chopped fresh basil
6 skinless, boneless chicken breast halves
12 large, thin slices prosciutto

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread 1 tablespoon olive oil on a baking sheet.
  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir shallots until translucent, about 3 minutes. Stir garlic, thyme, salt, and pepper into shallots; cook and stir until fragrant, about 2 minutes. Transfer shallot mixture to a bowl; stir in goat cheese, mozzarella cheese, cream cheese, figs, and basil until well combined.
  • Pound each chicken breast on a work surface until thin. Spoon about 1/4 cup goat cheese mixture onto the middle of each piece of chicken. Roll chicken around the filling and wrap 2 pieces prosciutto around each chicken roll, covering the opening with 1 layer of prosciutto. Place chicken rolls onto the prepared baking sheet, seam-side down.
  • Bake in the preheated oven for 20 minutes; turn chicken and continue baking until chicken is no longer pink in the center and prosciutto is crisp, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let chicken stand for 5 minutes before serving.

SHRIMP WRAPPED WITH PROSCIUTTO

Shrimp Wrapped with Prosciutto image

An adventurous dish of fried polenta cakes, shrimp wrapped in prosciutto and a hazelnut liquor sauce! It is as beautiful to see as it is to eat.

Provided by PEGW

Categories     Side Dish     Grain Side Dish Recipes     Polenta Recipes

Time 45m

Yield 6

Number Of Ingredients 12

2 cups water
1 tablespoon butter
salt and pepper to taste
½ cup polenta
6 ounces mascarpone cheese
2 tablespoons olive oil
6 large shrimp - peeled and deveined
1 ½ cups finely chopped toasted hazelnuts
6 (1/2 ounce) slices prosciutto
2 fluid ounces hazelnut liqueur
⅔ cup heavy cream
4 green onions, with tops flared

Steps:

  • In a medium-size pot bring water to a boil. Add butter, salt, and pepper. Mix in dry polenta and let cook until thickened, approximately 8 minutes.
  • When the polenta has thickened, gently blend mascarpone cheese into it. Remove the pan from heat. Spread polenta-cheese mixture to a 2-inch thickness on an oil-coated surface. When cool, cut a disk using a drinking glass as a cutter. Saute polenta disks in olive oil, in a non-stick skillet. Set aside. (Can be prepared in advance).
  • Coat shrimp with hazelnuts and wrap each with a slice of ham. In a skillet, saute shrimp carefully in remaining olive oil. Remove shrimp from the pan and keep them warm.
  • Pour hazelnut liquor into another skillet (or the same skillet used to saute the shrimp, cleaned). When hazelnut flavored liquor is hot (but well under the boiling point), carefully flambe (by touching the edge of the pan with the flame of a match or taper). Be careful and stand back when cooking with open flame! When flames die down, add cream and remaining hazelnuts. Lower heat and continue cooking until mixture thickens.
  • To assemble, place a polenta disk in the center of a serving dish. Arrange shrimp around the plate. Drizzle sauce mixture on top. Garnish with green onions.

Tips:

  • Choose fresh and vibrant vegetables: A medley of colorful and crisp vegetables not only adds visual appeal but also ensures the best flavor and texture.
  • Prep your vegetables properly: Trim, peel, and cut your vegetables evenly so they cook at the same rate. Blanching some vegetables, like asparagus and carrots, helps retain their vibrant color and prevents them from becoming limp.
  • Use high-quality prosciutto: Opt for prosciutto that is thinly sliced and not too salty. This will ensure that the prosciutto complements the vegetables without overpowering them.
  • Wrap the vegetables tightly: Make sure to wrap the prosciutto around the vegetables snugly to prevent them from falling apart during cooking.
  • Bake until golden brown: Bake the prosciutto-wrapped vegetables in a preheated oven until the prosciutto is crispy and the vegetables are tender. Keep an eye on them to prevent burning.

Conclusion:

Prosciutto-wrapped vegetables are a delicious and versatile appetizer or side dish that can be enjoyed by people of all ages. With its combination of salty prosciutto, tender vegetables, and flavorful herbs, this dish is sure to impress your guests. Whether you choose to serve it as a colorful addition to your holiday spread or as a tasty snack, prosciutto-wrapped vegetables are a delightful treat that will leave you wanting more.
