Fettuccine Puttanesca is a classic Italian pasta dish that combines simple, bold flavors to create a delicious and satisfying meal. Originating from the Campania region, this dish is traditionally made with a combination of tomatoes, capers, olives, anchovies, garlic, and chili peppers tossed with fettuccine noodles, creating a vibrant and flavorful sauce. The unique name "Puttanesca," which translates to "whore-like" in Italian, is thought to have originated from the notion that the dish was created by resourceful women of questionable reputation who had to make a quick and satisfying meal with limited ingredients. However, despite its intriguing name, Fettuccine Puttanesca has become a widely enjoyed dish and a staple in many Italian restaurants and home kitchens worldwide.

PASTA PUTTANESCA
There are almost as many explanations for the origins of pasta puttanesca as there are ways to make it. Ostensibly a sauce invented and made by prostitutes, it was designed to lure customers with its powerful aroma. Whatever the origin, no better cold-weather pasta sauce has come down to us. Puttanesca can be made completely with ingredients from the larder; in fact, it can be prepared entirely without ingredients that require refrigeration, though a bit of a fresh herb at the end does help. The basis is a garlicky tomato sauce; canned tomatoes are preferable here. This is brought to a high level of flavor by the addition of anchovies, capers and olives. Red pepper flakes make things even better. The whole process is ridiculously easy.

Steps:
- Bring pot of water to boil and salt it. Warm 2 tablespoons oil with garlic and anchovies in skillet over medium-low heat. Cook, stirring occasionally, until garlic is lightly golden.
- Drain tomatoes and crush with fork or hands. Add to skillet, with some salt and pepper. Raise heat to medium-high and cook, stirring occasionally, until tomatoes break down and mixture becomes saucy, about 10 minutes. Stir in olives, capers and red pepper flakes, and continue to simmer.
- Cook pasta, stirring occasionally, until it is tender but not mushy. Drain quickly and toss with sauce and remaining tablespoon of oil. Taste and adjust seasonings as necessary, garnish with herbs if you like, and serve.

PASTA PUTTANESCA
This sauce is named for ladies of the night. They would place pots of it in their windows to tempt men into the bordellos. I like it because it's spicy, fast and easy (no disrespect to the ladies).

Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.
- Toss sauce with cooked pasta. Pass bread and cheese at the table and serve with Bitter Greens Salad.
- Combine greens in a salad bowl. Squeeze the juice of 1 lemon over the bowl. Drizzle salad liberally with extra virgin olive oil. Toss salad and season salad with salt and pepper. Arrange salad on plates. Garnish plates with black olives, if using.

Steps:
- The first six ingrediants (with the exception of the tbsp for the pasta) should be made several hours ahead in order to let the flavors set. Prepare the pasta as directed on the bag. Add remaining olive oil to pasta to keep from sticking. Let it cooked until it is al dente. While pasta is cooking start preparing the sauce. In a saucepan add the oil sauce that you had prepared earlier and capers, cook on low heat for 5 minutes. Next add mushrooms, black olives and artichokes. Cook an additional 10 minutes on medium heat. Finally add tomatoes and continue cooking for 5 minutes. Drain pasta and toss in puttana sauce. Garnish with the freshly grated cheese and some of the crushed pepper NOTE: Remember to toss in the tomatoes last, you don't want to much of the water in the sauce.

PASTA PUTTANESCA
Legend has it that this savory recipe was a favorite of "ladies of the night" in Italy (the term puttanesca derives from puttana, the Italian word for prostitute), who quickly prepared and ate the dish between clients. Now, of course, it's simply known as a flavorful meal that's easy to make in just a few minutes.

EASY PASTA PUTTANESCA
Pasta Puttanesca literally means "Harlot's Pasta". This zippy, mildly spicy sauce was made by the ladies of the night in Italy after a day's work. Use whatever noodle style your family enjoys, but I recommend traditional linguine or penne. This dish is extremely adaptable to your own taste. Try adding peppers or Italian sausage for a different flavor.

Tips:
- Use high-quality ingredients: Fresh, ripe tomatoes, briny olives, and flavorful anchovies are essential for a delicious puttanesca sauce. Opt for San Marzano tomatoes if available, as they have a naturally sweet and acidic flavor that works well in this dish.
- Don't be afraid of anchovies: Anchovies may seem like an unusual ingredient, but they add a umami-rich flavor to the sauce that is essential to its overall taste. Be sure to rinse and chop them finely before adding them to the pan.
- Cook the sauce slowly: The sauce should simmer for at least 15 minutes to allow the flavors to meld together. This will also help to thicken the sauce slightly.
- Adjust the seasoning to taste: The amount of salt and pepper you add to the sauce will depend on your personal preference. Start with a small amount and add more to taste.
- Serve immediately: Puttanesca is best served immediately after it is made. The pasta will absorb the sauce and become soggy if it sits for too long.
Conclusion:
Fettuccine puttanesca is a quick and easy pasta dish bursting with flavor. It is a great way to use up pantry staples and can be easily customized to your liking. Try adding different vegetables, such as zucchini or bell peppers, or swap out the anchovies for capers or sun-dried tomatoes. No matter how you make it, fettuccine puttanesca is sure to be a hit with your family and friends.
