Number Of Ingredients 6

3 cups uncooked instant rice
3 cups water
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 tablespoon chicken bouillon granule
3/4 cup sour cream
1 1/2 cups shredded cheddar cheese, divided

Steps:

  • In a bowl, combine the rice, water, tomatoes and bouillon and mix.
  • Pour into a greased microwave dish.
  • Cover and microwave on high for 10 minutes.
  • Stir in the sour cream and 1/2 cup of cheese and mix.
  • Sprinkle with the remaining cheese.
  • Cover and microwave for 45 seconds or until cheese is melted.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the queso rice will be. Use fresh, flavorful rice, a good quality cheese blend, and flavorful seasonings.
  • Don't overcook the rice: The rice should be cooked through but still have a slight bite to it. Overcooked rice will be mushy and ruin the texture of the queso rice.
  • Use a good quality cheese blend: A good cheese blend will melt smoothly and evenly. Avoid using pre-shredded cheese, as it often contains additives that can prevent it from melting properly.
  • Add your favorite seasonings: Feel free to add your favorite seasonings to the queso rice. Some popular options include chili powder, cumin, garlic powder, and onion powder.
  • Garnish with your favorite toppings: Once the queso rice is cooked, garnish it with your favorite toppings. Some popular options include diced tomatoes, chopped cilantro, and sour cream.

Conclusion:

Queso rice is a delicious and versatile dish that can be served as a main course or a side dish. It's easy to make and can be customized to your liking. With its creamy, cheesy flavor and colorful toppings, queso rice is sure to be a hit at your next party or potluck.
