4 boneless skinless chicken breasts (6 ounces each)
4 corn tortillas (6 inches), chopped
1 cup shredded pepper Jack cheese
1-1/4 cups salsa verde, divided
1/2 cup cornmeal
1 teaspoon garlic salt
2 tablespoons canola oil
1/2 cup water
3 tablespoons orange marmalade
1 teaspoon chili powder
1/4 cup sour cream
1/3 cup minced fresh cilantro
2 cans (15 ounces each) Southwestern black beans, warmed

Steps:

  • Flatten chicken breasts to 1/4-in. thickness; set aside. In a small bowl, combine the tortillas, cheese and 1/2 cup salsa verde. Spoon tortilla mixture down the center of each chicken breast; roll up and secure with toothpicks., Combine cornmeal and garlic salt in a shallow bowl; coat chicken with cornmeal mixture., In a large skillet, brown chicken in oil. Add the water, marmalade, chili powder and remaining salsa to the pan. Bring to a boil. Reduce heat; cover and cook until a thermometer reads 170°, 15-20 minutes. Discard toothpicks., Top chicken with sour cream and cilantro. Serve with beans.

1 pound skinless boneless chicken breasts
2 teaspoons Gay Lea Butter
1 pinch Pinch salt
1 pinch Pinch pepper
2 cups shredded Ivanhoe Old Cheddar
⅔ cup Gay Lea Sour Cream
1 cup diced green pepper
⅓ cup salsa
½ cup sliced black olives
1 jalapeno pepper, seeded and minced
2 tablespoons chopped fresh cilantro
4 large flour tortillas

Steps:

  • Cut chicken into small 1-inch (2.5cm) cubes. In skillet, melt butter over medium high heat and cook chicken for about 8 minutes or until no longer pink inside. Salt and pepper to taste. Pour into large bowl and stir in 1/2 cup (375mL) of the cheese, sour cream, green pepper, salsa, olives, jalapeno, and cilantro.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Divide mixture among tortillas: Fold and roll to enclose filling completely; place seam side down in small baking dish. Sprinkle with remaining cheese.

Non-stick cooking spray
5 cups water
1 1/2 Tbsp. chili powder
1/4 cup cilantro, chopped
3/4 cup salsa, mild
3/4 cup red pepper, diced
1 cup onion, chopped
3 cups UNCLE BEN'S® Whole Grain Instant Brown Rice
3 whole chicken breasts
1 cup corn kernels, frozen or canned

Steps:

  • Cut chicken breasts into 1/2-inch strips.
  • Spray a wide bottom sauce pot or 12-14 inch skillet with a nonstick spray and heat over a medium heat until hot. Add the chicken and red pepper, cook until chicken is browned and fully cooked.
  • Remove from pan, set aside and keep warm.
  • In same pan add the onion, cook for 30 seconds. Add the water, rice, chili powder, corn and salsa; simmer for 10 minutes or until rice is done.
  • Serve chicken and peppers over the rice with chopped cilantro.
