1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

1 chipotle in adobo, chopped

  • Take a large platter and spread out a layer of refried beans on the bottom. Combine the avocados, lemon juice, salt and pepper and spread the mixture on top of the beans. Another great mix that makes life easier (see also "my" Hot Mexican Rub recipe #132796). I included this as part of a gift basket for my friend and of course I had to try it before giving it away. Too bad I din't read the whole recipe before making it. When not only the mix but also the dip was finished, I realised it should go in the fridge for two hours or so. I couldn't wait that long and ate it immediately. Loved it and prepared a second batch. This time I had some leftovers and I put it in the fridge. The next day it tasted even better! Yes, chilling does improve the dip! As I wanted to prepare the dip just for myself, I mixed 2 tablespoons sour cream with 2 tabelspoons low fat mayonnaise and 2 teaspoons Mexican Fiesta Dip Mix. I am considering to prepare the next batch without the dry herbs but add fresh herbs to the mix when preparing the dip. I love fresh herbs and I grow so many on my balcony. When typing this recipe I realised that I forgot to add the salt into my mix. I didn't even miss it! That's why I wrote optional next to the salt. Serve this dip with tortilla chips or fresh vegetables.

1/3 cup chili powder

1 (8 ounce) can of las palmas red enchilada sauce

1 (12 ounce) container sour cream
24 ounces shredded cheddar cheese or 24 ounces monterey jack cheese
2 (6 ounce) cans sliced black olives
1/2 cup finely chopped green onion

Steps:

  • Spread unheated beans in the bottom of a 9x11 size glass dish or glass baking pan.

1-2 containers of grape tomatoes

2 tablespoons cooking oil
3 medium tomatoes, peeled, seeded and chopped- divided
2-4 tablespoons fresh jalapeno peppers, chopped

2 1/2 cups monterey jack cheese, divided
8 oz. cream cheese cut into 1/2 inch cubes
1 cup half and half
1/2 cup sliced black olives
1 tablespoon red wine vinegar
1/4 tsp. each salt & pepper
tortilla chips or assorted fresh vegetables

Steps:

  • 1. Preheat oven to 400 degrees. In a 10" skillet, cook onion in oil until tender. Add 2/3 of the chopped tomatoes and all of the jalapeno peppers; cook 2 minutes more. Transfer mixture to large bowl. Stir in spinach, 2 cups Monterey Jack cheese, cream cheese, half and half, olives, vinegar, salt and pepper. Mix well.
  • 2. Spoon into a 1 1/2-2 qt. baking dish. Bake about 35 minutes or until hot and bubbly. Top with remaining Monterey Jack cheese, chopped fresh tomato and freshly chopped cilantro or parsley.

If you like hot and spicy...I am not kidding when I say these things are AMAZING! A co-worker made loads of these at Christmas, and I believe I ate my weight in them! I was very surprised by the way these are made after getting her recipe. A few important notes - Do not substitute regular Ritz for the whole wheat, they will not turn out the same for some reason. 144 ritz whole wheat crackers (4 sleeves/1 box)
3/4 cup vegetable oil
3 tablespoons red pepper flakes
1 tablespoon taco seasoning (heaping)
1 tablespoon ranch dressing mix (heaping)
1 (16 ounce) container sour cream
1 (1 ounce) packet ranch fiesta dip mix

Steps:

  • Place all crackers into a large zip lock bag.
  • Whisk oil, pepper flakes, taco seasoning and dry Ranch dressing together.
  • Pour into bag of Ritz and gently mix together, making sure crackers are well covered and close bag.
  • Leave closed bag to set on counter for a minimum of 3 days, turning bag over twice each day. Can marinate up to 10 days.
  • Serve with Fiesta dip: Mix container of cold sour cream with packet of Fiesta Ranch dry dressing seasoning.
  • YUM!

After it's cooked you can spread a very thin layer of sour cream on top, just enough to help adhere your choice of toppings, such as diced peppers, tomatoes, cilantro, green onion, etc. To make a nice presentation on your Christmas buffet, cut stars out of red and green peppers and spread over the top.

8 -10 ounces grated cheese (I use 4 cheese Mexican style)
1 (4 ounce) can chopped green chilies

  • Beat cream cheese till light and fluffy.
  • Stir in all other ingredients and mix well.

4 ounces cream cheese, softened
1/2 cup sour cream
1 cup shredded monterey jack and cheddar cheese blend, divided

  • Preheat oven to 350°F Toss chicken with hot sauce; set aside. Mix cream cheese, sour cream, 1/2 cup of the shredded cheese and onions in medium bowl. Add chicken; mix well. Spread into small casserole dish or 9-inch pie plate. Bake 25 minutes or until heated through. Top with remaining 1/2 cup of shredded cheese. Serve with chips.
