Time 1h15m

Number Of Ingredients 11

1 1/2 lb lean ground beef
3/4 c unseasoned dry bread crumbs
1 egg, beaten
1 can(s) 4-oz can chopped green chilies, drained
1/2 c cheddar cheese, shredded
1 pkg taco seasoning packet 1.25 oz.
1 medium tomato, chopped
1/2 c green onions, chopped
2 Tbsp ketchup
1 Tbsp salsa
1/2 tsp seasoned salt

Steps:

  • 1. In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.
  • 2. Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.
  • 3. In a small bowl, combine remaining ingredients. Slice meatloaf into slices and spoon tomato mixture over slices.

Tips:

  • Use a flavorful ground meat blend: A combination of ground beef, pork, and veal produces a moist and delicious meatloaf. You can also use all beef or all pork, but the flavor will be less complex.
  • Add plenty of seasonings: A good meatloaf should be packed with flavor. Use a variety of herbs and spices, such as garlic, onion, paprika, thyme, and oregano.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Shape the meatloaf into a loaf: Use your hands to shape the meatloaf into a loaf shape. Make sure it is evenly shaped so that it cooks evenly.
  • Use a baking dish with sides: A baking dish with sides will prevent the meatloaf from spreading out and becoming flat.
  • Bake the meatloaf at a high temperature: Bake the meatloaf at a high temperature for the first 30 minutes, then reduce the heat and continue baking until the meatloaf is cooked through.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10 minutes before slicing. This will help the meatloaf hold its shape and make it easier to slice.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and loved by people of all ages. With a few simple tips, you can make a delicious and flavorful meatloaf that will be the star of your next meal. So next time you're looking for a hearty and satisfying dish, give fiesta meatloaf a try!
