3/4 cup all-purpose flour, (spooned and leveled)
3/4 cup packed dark-brown sugar
2 teaspoons baking powder
3/4 teaspoon coarse salt
3/4 teaspoon anise seed, chopped
3 large eggs
1 tablespoon finely grated orange zest (from 1 large orange)
1 cup coarsely chopped dried Calimyrna figs (6 ounces)
1 cup walnuts, toasted and roughly chopped
Nonstick cooking spray

Steps:

  • Preheat oven to 325 degrees. In a large bowl, whisk together flours, brown sugar, baking powder, salt, and anise. In a medium bowl, whisk eggs until they're pale yellow and hold a ribbon for 1 second when whisk is lifted, about 5 minutes. Whisk in zest.
  • Fold egg mixture into flour mixture until combined. Fold in figs and walnuts. Lightly spray a parchment-lined baking sheet with cooking spray. Divide dough in half on parchment. 3/4 cup (123 grams) potato starch
1 tablespoon (8 grams) xanthan gum

1 1/2 cups granulated sugar, plus more for dusting and sprinkling
2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons honey
1/2 vanilla bean, split and scraped
4 large eggs, at room temperature
8 dried calimyrna figs, coarsely chopped
1 large egg beaten with 1 tablespoon water, for the egg wash
1/2 cup confectioners' sugar
2 1/2 tablespoons pure maple syrup

Steps:

9 ounces dried Mission figs, stems discarded
1/2 cup raisins
3/4 cup honey
1/3 cup orange juice
1 tablespoon ground cinnamon

1 large egg, beaten to blend

Steps:

  • For the pastry dough: Whisk the eggs and vanilla in a small bowl to blend. Mix the flour, sugar, lemon zest, and salt in a large bowl.
