2 tablespoons brown sugar
1 large red onion, sliced
4 tablespoons butter, plus 1 1/2 sticks, melted
1/4 cup fig jam
3/4 cup plus 2 tablespoons balsamic vinegar
1 package filo dough sheets
1 container goat cheese, crumbled
1/4 cup bourbon
1/2 teaspoon cayenne pepper
Salt and pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with a silicone baking mat.
  • Put the bacon in a small skillet and cook until crisp; drain.
  • Put the brown sugar, red onions and 4 tablespoons of the butter in a skillet over medium heat. Cook, stirring, until the onions are tender, 6 to 8 minutes, then add the fig jam and 2 tablespoons of the balsamic vinegar. Continue cooking until the onions are caramelized, another 15 minutes. 1/4 cup olive oil
2 large Spanish onions, thinly sliced
10 garlic cloves, crushed

2 sliced baguettes, for dipping

Steps:

  • Preheat the oven to 350 degrees F.
  • Crumble the goat cheese into an oven safe dish and set aside.
  • In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.

1 tablespoon olive oil
1 small sweet onion, sliced
4 -6 fresh figs, cut in half
5 ounces goat cheese (if you can get goat cheese with cranberries it fabulous)
1 teaspoon chopped fresh rosemary
1/2 cup mozzarella cheese, shredded
olive oil
cornmeal

  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
