- Pat the steaks dry with paper towels and season generously with salt and pepper. In a heavy skillet, heat the oil over medium-high heat until almost smoking. Sear the steaks in the hot oil for 3 minutes per side for medium-rare. Transfer the steaks to a serving plate, tent with foil, and let stand.

FILET MIGNON WITH GARLIC SHRIMP CREAM SAUCE
I am a big fan of combining steak and seafood. This is a cheaper option than a jumbo lump crabmeat recipe I enjoy as well. Hope you find it tasty.

Steps:
- Heat a heavy steel or cast-iron skillet over medium-high heat. Brush both sides of each filet with 1 tablespoon olive oil, and sprinkle with salt. Gently place the filets into the hot skillet, and cook until they start to become firm and are reddish-pink and juicy in the center, about 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Set the filets aside to rest, covered loosely with foil.
- Melt 2 tablespoons butter with 2 tablespoons of olive oil in the skillet over medium heat until the foam subsides from the butter. Cook and stir the shallot and garlic until tender, about 2 minutes. Pour in the wine, and cook and stir until the wine reduces by half, about 3 minutes.
- Stir in the shrimp, cream, 1 tablespoon of butter, and a pinch of salt and pepper to taste. Cook and stir until the sauce is thickened and velvety and the shrimp are pink, about 2 minutes.
- To serve, place filets on serving plates, and top each with half the shrimp sauce. Sauce will thicken slightly as it cools.

Tips:
- For the perfect medium-rare filet mignon, cook it in a hot skillet for 3-4 minutes per side, or until it reaches an internal temperature of 135°F (57°C).
- If you don't have a meat thermometer, you can check the doneness of the filet mignon by pressing on it with your finger. If it springs back, it's medium-rare. If it's still soft, it's rare. If it's firm, it's medium.
- Let the filet mignon rest for 5-10 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
- To make the blackberry sauce, simply combine blackberries, sugar, vinegar, and water in a saucepan and bring to a simmer. Cook for 10-15 minutes, or until the sauce has thickened. You can also add a bit of cornstarch to thicken the sauce if desired.
- Serve the filet mignon with the blackberry sauce and your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
Conclusion:
Filet mignon with blackberry sauce is a classic dish that is perfect for a special occasion. The tender and juicy steak pairs perfectly with the sweet and tangy sauce. This dish is sure to impress your guests.
