Steps:
- Preheat the oven to 375 degrees F.
- Place the garlic cloves in a small ovenproof dish. Drizzle with 2 tablespoons of the olive oil and sprinkle with salt and pepper. Cover with foil and roast in the oven until the garlic is golden and soft, about 45 minutes. Set aside to cool completely.
- To a large bowl, add the softened butter, parsley, chives, thyme, red pepper and the roasted garlic. Using a spatula, mix everything together until well combined. Lay out a large piece of plastic wrap and add the butter in a long strip down the middle. Pull one side of the plastic wrap over the butter and gently form it into a log. Tightly twist the ends like a candy wrapper, until everything is nice and tight. Transfer to the fridge for a couple hours to harden. (Butter can be made ahead; it will keep for 1 week in the fridge.)
- When you are ready to cook the steaks, preheat the oven to 450 degrees F.
- Sprinkle the steaks liberally with salt and pepper. Add the remaining tablespoon each olive oil and butter to an ovenproof skillet and place over a medium-high heat. When the oil is hot and the butter is melted, place the steaks in the skillet and cook until well browned, about 1 minute per side.
- Place the skillet in the oven and cook the steaks for 4 to 5 minutes for medium-rare. Remove from the oven and top each steak with a thick slice of the garlic butter. Loosely cover with foil and allow to rest for 8 to 10 minutes.

FILET MIGNON FOR TWO
Filet mignon with Gorgonzola sauce is a very simple and delicious meal for two. A good sear on your steak will ensure a juicy, tender steak. I have found this to be the best way to cook a steak indoors.

Steps:
- Preheat the oven to 500 degrees F (260 degrees C). Place a large, oven-proof skillet in the oven as it preheats.
- Bring steaks to room temperature. Rub with olive oil and season generously with salt and pepper.
- Remove the hot skillet from the oven carefully and place it on a burner set to high heat. Leave the oven on.
- Place steaks into the dry pan immediately and sear, turning with tongs, 1 to 2 minutes on both sides.
- Transfer the pan back into the preheated oven and cook until desired doneness is reached, 3 to 5 minutes. For medium doneness, an instant-read thermometer inserted into the centers should read 140 degrees F (60 degrees C). Transfer steaks to a warm platter and tent loosely with foil. Let rest for 5 to 10 minutes; the steaks will continue to cook during this process and the internal temperature will rise 5 to 10 degrees.
- Meanwhile, heat butter in a medium saucepan over medium heat. Add shallot and garlic and saute until shallot is tender, 5 to 7 minutes. Pour in cream; let cook until reduced by half, about 10 minutes. Turn heat to low and add Gorgonzola cheese. Let cheese melt; season with salt and pepper. Serve sauce with steaks.

Steps:
- Rub steaks with olive oil, season with salt and pepper, and let stand at room temperature for 15 minutes.
- Heat medium skillet over medium-high heat. For rare steak, cook filets until instant thermometer reads 130 degrees, about 10 minutes, turning once (for filets cooked to a greater doneness, turn down heat and increase cooking time). Transfer to serving plate and tent loosely with aluminum foil.
- Place pan on medium heat; melt butter until it begins to brown slightly, scraping up any browned bits. Add garlic, and cook until fragrant, about 15 seconds. Add tarragon, swirling to blend. Pour sauce over steaks. Serve immediately.
Tips:
- To ensure the best results, select high-quality filet mignon steaks that are at least 1 inch thick.
- Bring the steaks to room temperature before cooking to promote even cooking.
- Season the steaks generously with salt and pepper, and optionally, other desired seasonings, before searing.
- Sear the steaks in a hot skillet with butter or oil until a nice crust forms, and then transfer them to a baking dish.
- Top the steaks with the garlic-cheese butter mixture and bake in a preheated oven until the steaks reach your desired doneness.
- Let the steaks rest for a few minutes before serving to allow the juices to redistribute.
- Garnish with fresh herbs, such as parsley or thyme, for added flavor and presentation.
