FILETE DE CULICHI (TILAPIA W MUSHROOMS IN POBLANO CREAM SAUCE)
This is a my take on a special dish that our favorite Mexican restaurant in our town - 3 Margaritas - makes for my husband and me. It is not on the menu, but since we love fish they made this for us once and now we get it often, as do our friends. We expect this to be on the menu someday soon. It is tender Tilapia sautéed with garlic butter, topped with mushrooms and smothered in a special Poblano Cream sauce and it is YUMMY! You could replace the tilapia with anything - another kind of fish, chicken, whatever... and it would still be great! Serve with rice and beans on the side and fresh flour tortillas for dipping!

Steps:
- Preheat Broiler.
- Poblano Sauce: Prepare Poblano chilies by roasting under broiler until they are fully blistered.
- Remove chilies from broiler and turn off oven.
- Put chilies in a brown paper bag to steam for 10 minutes. Allow to cool, then peel and remove seeds and stems. Cut peppers and put into medium sized bowl.
- In a saucepan combine oil, Poblano peppers, onions, cilantro leaves, garlic and seasoning. sauté over high heat, stirring occasionally, 2 minutes. Stir in stock, bring to a boil, and boil vigorously, 18 minutes. Reduce heat to medium, stir in heavy cream, and simmer 2 minutes. Transfer sauce to blender or food processor and puree until smooth. For a smoother sauce, you can strain sauce as well.
- Tilapia: Melt in a butter large heavy skillet. Add garlic and sauté for about 30 seconds. Season tilapia filets with salt and pepper and add to pan. Cook over moderately high heat until browned, 3 minutes per side.
- Remove tilapia filets from the pan leaving the garlic butter and arrange tilapia in a baking dish just large enough to hold them in a single layer. Add mushrooms to skillet. Cover and sauté for about 15 minutes.
- When mushrooms are close to done, preheat oven to 350 degrees.
- Pour mushrooms over tilapia. Pour sauce over tilapia and mushrooms. Sprinkle cheese over the top.
- Bake for about 10 minutes or until sauce is bubbling and tilapia is cooked through.
- Serve with rice and refried beans on the side and flour tortillas for dipping.

Steps:
- Season chicken breast with salt and pepper.
- Place onion, garlic, poblano and chicken breast in crock pot.
- Mix together broth, adobe sauce and cumin; pour over chicken.
- Cover and cook on low for 3 hours.
- Meanwhile, dice cream cheese and allow to come to room temperature.
- After cooking for three hours, ladle into a small bowl approximately 1/2 cup of hot broth from crock pot.
- Whisk in the cream cheese.
- When well incorporated, add cream cheese mixture to crock pot; stirring well.
- Cover and cook on low for an additional 1 1/2 hours (or until done).
- Serve over rice or noodles.
- Garnish with fresh parmesan cheese.

- Stuffing:.
- Combine stuffing ingredients and hand mix well.
- On a oiled baking sheet or 2 lay out half of the fillets.
- Place the stuffing on each fillet.

- For Adobo Cream Sauce: In mixing bowl combine mayonnaise, sour cream, 2 teaspoons adobo seasoning, lemon peel, lemon juice and 1/2 teaspoon salt.
- Whisk egg in shallow bowl. In another shallow bowl combine remaining adobo seasoning, flour, cornmeal and remaining salt.
- Dip fillets in egg and coat with cornmeal mixture.

Steps:
- To roast poblanos, slice in half, seed, flatten halves with palm of hand and place skin-side-up on cookie sheet. Broil for about 10 minutes on top rack of oven until skin is brown and bubbly. Immediately remove to plastic bag or container and place in refrigerator (this makes peeling skin very easy later!).
- Meanwhile, season chicken with garlic salt and black pepper. Bake at 425° for about 30 minutes.
- Remove chicken from oven and set oven temp at 350°. Allow to rest to maintain juiciness. Reserve cooking juices. Shred chicken by lightly pulsing in blender or pulling apart with two forks. Set aside.
- Peel and discard skin from cooled poblanos. Place poblano "meat" in blender, add cream of chicken soup and reserved juice from chicken's baking pan. Puree until smooth.
- Place about 2 Tbsp shredded chicken in a tortilla and top with a little shredded cheese and onion. Roll up and place in 11x13 baking dish. Repeat for all tortillas in package.
- Sprinkle tops of enchiladas with any extra cheese and onion. Pour poblano cream sauce over enchiladas, covering completely. Bake in 350° oven for about 30 minutes, til warmed through. Serve with side of rice and shredded lettuce.
