12 ounces of libby's canned corned beef
2 -3 teaspoons vegetable oil
4 garlic cloves, minced (to taste)
1 small onion, sliced into rings (to taste)
1 medium potato, cut into cubes
2 roma tomatoes, diced (to taste)
salt and pepper (to taste)
1/4 cup water
1 cup of freshly cooked jasmine rice

Steps:

  • Place corned beef in a bowl, pull it apart with a fork, and set aside.
  • In a pan, on medium-low heat, sauté potatoes in oil for about 2 minutes, and season with salt and pepper.
  • Add garlic, sauté for about 30 seconds.
  • Add onion rings and sauté for a minute.
  • Add the tomatoes and sauté for a minute.
  • Throw in the corned beef and sauté with the other ingredients for 2 minutes.
  • Season with salt and pepper to taste.
  • Set heat on low, pour in water, and let the mixture simmer for 2-3 minutes just until the potatoes are perfectly cooked, most of the water is absorbed, and the mixture is slightly moist.

3 (14-ounce) cans coconut milk
4 cups sweet rice
2 cups brown sugar, lightly packed
1 cup coconut cream

Steps:

  • Pour coconut milk and about a cup of water into a pot and let it come to a simmer over medium heat. When simmering, add in the rice and stir constantly to prevent burning. Lower the heat if necessary. Preheat oven to 350°F. When rice is fully cooked, sticky and almost dry (it will look like sticky risotto), about 10 to 15 minutes, add 1 cup brown sugar. (Note: If rice is already sticky but not yet fully cooked, add small amounts of water, stir and continue cooking. Rice must be fully cooked before it goes into the oven.) Stir well and take off heat. Pour into a lightly buttered 9×13-inch pan and smooth the top. Mix the remaining 1 cup brown sugar and coconut cream until smooth and pour it over the rice. Bake for about 1 hour or up to 1 1/2 hours, until topping is dark brown and has thickened. Cool slightly before serving.

1 onion, chopped
2 cloves garlic
2 teaspoons paprika
2 ¼ pounds chicken legs, thighs, and wings
1 ½ cups sweet peas
1 (7 ounce) can olives
2 links chorizo de bilbao (spicy Spanish semi-cured sausage), or to taste
salt and ground black pepper to taste
2 tomatoes, diced
1 cup water
2 cups glutinous sweet rice (malagkit)

1 red bell pepper, sliced lengthwise
2 hard-boiled eggs, sliced lengthwise

Steps:

  • Heat olive oil in a skillet over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add paprika and mix well. 1 pound pork belly, cut into 3/4-inch cubes
2 teaspoons Chinese cooking wine
1 teaspoon oyster sauce
1 teaspoon cornstarch
½ teaspoon sesame oil
¼ teaspoon salt
1 pinch ground black pepper
1 teaspoon vegetable oil
1 tablespoon minced garlic
½ tablespoon fried shallots
3 cups water
1 tablespoon light soy sauce, or to taste
¼ teaspoon dark soy sauce
¼ pound uncooked medium shrimp, peeled and deveined
1 tablespoon cornstarch
3 tablespoons water
2 tablespoons frozen peas
2 tablespoons vegetable oil
2 tablespoons minced garlic

1 teaspoon oyster sauce
1 teaspoon light soy sauce

Steps:

4 c sweet rice also known as glutinous rice, soaked overnight in 8 cups of water (available in asian markets)
3 can(s) (14 ounces each) coconut cream or coconut milk
2 c brown sugar, lightly packed
1 c (8 ounces) coconut milk

Steps:

  • 1. Soak rice overnight. The next day, drain and set aside.
  • 2. Pour coconut milk and about a cup of water into a pot and let it come to a simmer over medium heat. When simmering, add soaked rice and stir constantly to prevent burning. Lower the heat if necessary. Preheat oven to 350F.
  • 3. When rice is fully cooked, sticky and almost dry (it will look like sticky risotto), about 10-15 minutes, add 1 cup brown sugar. (Note: If rice is already sticky but not yet fully cooked, add small amounts of water, stir and continue cooking. Rice must be fully cooked before it goes into the oven.) Stir well and take off heat. 14 oz sweetened condensed milk
1/2 c butter
4 egg
2 jar(s) sweet coconut strings in heavy syrup
2 1/2 c mochiko sweet rice flour
1 c brown sugar, firmly packed
1 Tbsp vanilla extract

  • 1. 1 Preheat oven to 375°F Line a 12" x 17" x 1" baking sheet with parchment paper. 2 2. In a large mixing bowl, beat coconut milk, condensed milk, and melted butter until combined. Add eggs, one at a time, and beat until combined. Do the same with both jars of macapuno strings. Gradually beat in mochiko flour.
