FIVE-BEAN SALAD

Five-Bean Salad image

In the classic version of this Italian salad, beans are slow-cooked until uniformly softened. In this interpretation, the beans are blanched quickly, to emphasize their fresh taste, color, and texture.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Yield Makes about 6 cups

Number Of Ingredients 20

6 cups water
2 teaspoons plus 1 tablespoon coarse salt
1 bay leaf
1 piece (1/2 inch) cinnamon stick
1/2 teaspoon whole black peppercorns
1 oregano sprig
3/4 pound fresh cranberry beans, shelled (about 1 cup)
4 ounces haricots verts (green, yellow, or a combination), trimmed
4 ounces green beans, trimmed
4 ounces wax beans, trimmed
4 ounces flat Italian beans (green, yellow, or a combination), trimmed
1 teaspoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1/4 cup red-wine vinegar
3/4 cup extra-virgin olive oil
1/4 teaspoon crushed red-pepper flakes
2 teaspoons finely chopped fresh oregano
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Make the beans: Stir together water, 2 teaspoons salt, bay leaf, cinnamon stick, peppercorns, and oregano in a saucepan. Bring to a boil. Add cranberry beans. Return to a boil. Reduce heat, and simmer until tender, 15 to 20 minutes. Drain.
  • Prepare an ice-water bath. Bring a large pot of water to a boil. Add remaining tablespoon salt. Working with one variety at a time, blanch remaining beans in boiling water until crisp-tender (about 1 1/2 minutes for haricots verts; 2 1/2 minutes for larger beans). Using a slotted spoon, transfer to ice-water bath to stop the cooking. Drain.
  • Make the dressing: Whisk together mustard, sugar, salt, and pepper in a large bowl. Add vinegar, and whisk until sugar has dissolved. Add oil in a slow, steady stream, whisking until emulsified. Whisk in red-pepper flakes and herbs.
  • Add beans to dressing, and toss. Let stand at room temperature for 1 1/2 hours, tossing occasionally, or marinate in the refrigerator overnight before serving.

SOUTHWEST SIMPLE, SASSY, SATISFYING FIVE BEAN SALAD

Southwest Simple, Sassy, Satisfying Five Bean Salad image

This simple, quick to put together recipe is a real crowd pleaser at gatherings. Besides being healthy with high protein and high fiber, it is one of the quickest consumed. I usually have the beans on hand, and just pick up a high quality Pico de Gallo to go with. Hope you enjoy, too.

Provided by Judikins

Categories     Beans

Time 2h5m

Yield 10 serving(s)

Number Of Ingredients 7

1 (15 ounce) can drained and rinsed black beans
1 (15 ounce) can drained and rinsed pinto beans
1 (15 ounce) can drained and rinsed garbanzo beans
1 (15 ounce) can drained and rinsed kidney beans
1 (15 ounce) can drained and rinsed cannellini or 1 (15 ounce) can white beans
1 (16 ounce) container fresh pico de gallo (not salsa)
1 cup coarsely chopped cilantro (optional)

Steps:

  • In large sealable container, combine all beans and Pico de Gallo.
  • Gently fold and add cilantro.
  • Refrigerate for at least 2 hours before serving.
  • Cooking time is refrigeration time.

Tips:

  • Choose the right beans: Use a variety of beans for different textures and flavors. Common choices include kidney beans, black beans, pinto beans, and navy beans. You can also add other legumes like lentils or chickpeas.
  • Soak the beans properly: Soaking the beans overnight helps to soften them and reduce cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then letting them sit for 1 hour.
  • Cook the beans until tender: The beans should be tender but still hold their shape. Overcooked beans will become mushy.
  • Use a flavorful dressing: The dressing is what brings all the flavors of the salad together. A simple vinaigrette made with olive oil, vinegar, Dijon mustard, and herbs is a good option. You can also use a store-bought dressing, but be sure to choose one that is flavorful and not too sweet.
  • Add other vegetables and ingredients: Feel free to add other vegetables and ingredients to your salad, such as corn, bell peppers, onions, tomatoes, cheese, or nuts. This will make the salad more colorful and flavorful.

Conclusion:

Five-bean salad is a delicious and versatile side dish that can be enjoyed at any time of year. With its variety of beans, vegetables, and dressing, it is a great way to get your daily dose of protein, fiber, and vitamins. So next time you are looking for a healthy and easy salad recipe, give five-bean salad a try.
