2 1/2 cups coarsely chopped toasted pecans (about 10 ounces), for filling
2 cups pecan halves (about 8 ounces), lightly toasted, for topping

5 1/2 cups pecan halves
3 tablespoons flour
12 tablespoons unsalted butter
1 cup packed light brown sugar
3/4 cup light corn syrup
2 tablespoons light corn syrup
4 large eggs, lightly beaten
2 teaspoons vanilla extract
1 pie shell

Steps:

  • Preheat oven to 350°F.
  • Spread 1/2 cup of the pecans on a baking sheet and toast them in the oven for 8 to 10 minutes, until lightly browned and fragrant.
  • Let cool completely.
  • Place the roasted nuts in a food processor and process until smooth and buttery.
  • Add the flour and pulse until incorporated.
  • Scrape into a large bowl and set aside.

3/4 cup packed brown sugar

2 teaspoons vanilla extract

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge.
