These easy treats are a fave that my mom always made at Christmas time. She would always take them to cookie exchanges, and they were always the first to be gone when they were around. (Cooking time does not include refrigeration time)

Time 25m

Yield 12-18 bars, 12-18 serving(s)

Number Of Ingredients 6

2 cups graham wafer crumbs
2 cups unsweetened coconut
1 (14 ounce) can sweetened condensed milk
1/2 cup margarine
2 cups chocolate (4 aero bars)
1/4 cup canola oil

Steps:

  • Melt the 1/2 cup margarine.
  • Mix together in same bowl graham wafer crumbs, coconut, condensed milk & melted margarine, mix well. Press into 9x9 pan ( I used a 2 qt rectangular glass baking dish) .
  • Bake 350°F for 15 minutes.
  • In microwave safe bowl place chocolate & oil, it's best to break the chocolate up, I use 4 aero bars (you can also use left over chocolate Easter bunny's).
  • Microwave on high approximately 2 minutes. As all microwaves vary keep an eye that it doesn't burn.
  • Stir well.
  • Pour over bottom & place in refrigerator until chocolate topping hardens. Sometimes it's best if left overnight -- that is if your able to wait that long -- Good luck!

Tips:

  • Select ripe bananas: Overripe bananas add natural sweetness and moisture to the bars, reducing the need for additional sugar.
  • Mash bananas until smooth: Ensure the bananas are mashed until smooth to avoid lumps in the batter.
  • Cream butter and sugar together: This creates a light and fluffy texture in the bars.
  • Add eggs one at a time: Gradually adding the eggs helps prevent the batter from curdling.
  • Fold in dry ingredients: Gently mix in the flour mixture to avoid overmixing the batter, which can result in tough bars.
  • Bake until golden brown: Bake the bars until they are golden brown on top and a toothpick inserted into the center comes out clean.
  • Cool completely before cutting: Allow the bars to cool completely before cutting them into squares, as this helps them set and prevents them from crumbling.
