1 (1 pound) flat iron steak
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon vegetable oil, divided
½ pound cremini mushrooms
½ cup Burgundy wine
1 cup beef stock
1 tablespoon butter, softened
1 tablespoon all-purpose flour
½ cup heavy whipping cream
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Sprinkle both sides of flat iron steak with salt, black pepper, garlic powder, and onion powder. 2 (1-pound) flat iron steaks or tri-tip steaks
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil, plus extra for garnish
6 tablespoons cold unsalted butter
1 onion, thinly sliced
1 tablespoon minced garlic
1 teaspoon dried oregano
1/4 cup tomato paste
2 1/2 cups dry red wine

Steps:

  • Prepare the grill or barbecue (medium-high heat). Sprinkle the steaks with salt and pepper and drizzle with the 3 tablespoons of olive oil. Grill to desired doneness, about 5 minutes per side for medium-rare. Transfer the steaks to a cutting board. Tent with foil and let stand 10 minutes.

2 tablespoons olive oil
12 ounces cremini mushrooms, quartered
3 garlic cloves, minced
1/4 cup fresh chives, rough chop
3 tablespoons peppercorns, coarse grind
1 tablespoon Dijon mustard
1/2 cup beef broth
1/3 cup whipping cream
1 teaspoon salt
1/2 teaspoon ground cumin
1 teaspoon ground black pepper

Steps:

  • Combine the salt, ground cumin and 1 teaspoon ground black pepper.
