FLATHEAD CHERRY COMPOTE

This simple compote is a great accompaniment to roasted lamb or beef. We live in Flathead cherry country so that's what I use, but any sweet dark cherry will work. If using frozen cherries, it usually isn't necessary to add the water.

Tips:

  • Choose ripe, firm cherries. Avoid cherries that are bruised or have soft spots.
  • Pit the cherries before cooking. You can use a cherry pitter or a knife to do this.
  • Use a heavy-bottomed saucepan to make the compote. This will help prevent the compote from burning.
  • Bring the compote to a simmer over medium heat. Do not boil the compote, as this will make it tough.
  • Stir the compote occasionally to prevent it from sticking to the bottom of the saucepan.
  • Simmer the compote for 15-20 minutes, or until the cherries are softened and the compote has thickened.
  • Remove the compote from the heat and let it cool slightly before serving.

Conclusion:
