1 1/4 pound skinless, boneless chicken breast halves(4 breast halves)
1/2 teaspoon dried thyme, crushed
1/7 teaspoon black pepper
2 tablespoons butter
2 1/4 ounces sliced mushrooms, (about 3/4 cup)
1 medium onion, finely chopped (about 1/2 cup)
1 tablespoon chopped fresh parsley
1/3 of an 8-ounce package cream cheese, softened
1 tablespoon Dijon-style mustard or all-purpose flour
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets(1 sheet), thawed

Steps:

  • Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork.
  • Season the chicken with the thyme and black pepper. Heat 1 tablespoon butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet. Cover and refrigerate for 15 minutes.
  • Heat the remaining butter in the skillet. Add the mushrooms and onion and cook until they're tender and the liquid is evaporated, stirring occasionally. Stir in the parsley.
  • Stir the cream cheese and mustard in a small bowl.
  • Sprinkle the work surface with the flour. Unfold the pastry on the work surface. Roll the pastry sheet into a 14-inch square. Cut into 4 (7-inch) squares.
  • Spoon about 1 tablespoon mushroom mixture on each square. Top with the chicken. Spread about 1 tablespoon cream cheese mixture on the chicken. Brush the edges of the pastry with the egg mixture.   • Preheat oven to 450°. Flatten chicken to an even thickness. One 17.3-ounce box frozen puff pastry (2 sheets), thawed
1/3 cup hot sauce, plus more for serving
5 tablespoons unsalted butter, melted
6 cooked breaded chicken cutlets (about 1 1/4 pounds)
One 4-ounce container crumbled blue cheese
1 pound part-skim mozzarella, cut into 8 slices
1 large egg, beaten
Ranch dressing, for serving
Carrot and celery sticks, for serving

Steps:

1 (10 ounce) package frozen chopped broccoli, thawed and drained
1 (5 1/4 ounce) package boursin cheese (garlic-herb spreadable cheese)
1 (17 1/4 ounce) package frozen puff pastry sheets, thawed
6 boneless skinless chicken breast halves (2 lbs. total)
1/2 teaspoon salt
1/4 cup plain breadcrumbs
1 large egg, slightly beaten with

Steps:

  • Heat oven to 425.
  • In bowl, stir broccoli and cheese to combine and set aside.

6 -8 ounces boneless skinless chicken breasts
2 lbs puff pastry
1 lb mushroom
2 cloves garlic
1/2 cup brandy
2 teaspoons lemon thyme, chopped fine
2 teaspoons lemons, zest of, finely diced
2 gallons chicken stock
4 cups merlot

Steps:

  • Reduce the 4 cups of Merlot until 1 cup and add the chicken stock.
  • Reduce until it becomes the consistency of a sauce.
  • Slice the mushrooms and saute in a little olive oil.
  • Flambe with the brandy, add the garlic, and lemon thyme and salt and pepper.
  • Remove from the heat, cool and grind or put in a food processor.
  • Pound chicken breasts between plastic wrap about 1/4 inch thickness.
  • Add about 2 Tablespoons of filling and roll up like a burrito and tie with string.
  • Sear in a saute pan to brown the outside (inside will be raw).
  • Let cool.
  • In the meantime, roll out puff pastry to 6- 8 sheets 6"x8".
  • Brush with egg wash.
  • Take chicken, remove the strong and put in center of puff pastry and roll up like a burrito.
  • Do this to the other chicken breasts.
  • Heat oven to 400 degrees, place chicken in pan, and cook about 20 minutes.
  • Remove from oven, slice and serve with the Merlot Sauce.

4 tablespoons extra virgin olive oil, divided
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
2 teaspoons dried parsley
1 ½ teaspoons kosher salt, divided
¾ teaspoon freshly ground black pepper, divided
1 boneless chicken breast, large
1 tablespoon dijon mustard
4 slices prosciutto
1 sheet frozen puff pastry, thawed
large egg, beaten
1 tablespoon extra virgin olive oil
2 tablespoons all purpose flour
2 cups chicken stock
½ teaspoon kosher salt
¼ teaspoon ground black pepper
2 teaspoons dried parsley

Steps:

  • Add the mushrooms to the bowl of a food processor and pulse until coarsely chopped, about 18-20 pulses.
  • Heat 2 tablespoons of olive oil in a medium skillet over medium heat. Add the mushrooms, garlic powder, onion powder, dried thyme, dried parsley, ½ teaspoon salt, and ¼ teaspoon black pepper and stir to fully combine. Cook, stirring often, until all of the liquid in the pan has evaporated, about 8 minutes. Turn off the heat and transfer the mushroom mixture to a bowl to cool. Wipe the pan clean with a paper towel.
