FLUFFY CAKE DOUGHNUTS
This recipe is very quick and easy to make. I have a donut pan, which is like a muffin pan, but has donut shaped holes rather than muffin shaped holes. These donuts are baked not fried, so they don't have so many calories. I mix up either a powdered sugar glaze or a chocolate icing to top these with. They can also be rolled in cinnamon and white sugar, but it doesn't stick very well. My husband likes them just plain. For a chocolate glaze, simply stir 1/2 cup melted chocolate chips into the glaze mixture.

Tips:
- Use the right ingredients: Fresh, high-quality ingredients will produce the best results. Make sure your butter is softened to room temperature, and use large eggs. Avoid using old or expired baking powder and baking soda, as they will not work as well.
- Don't overmix the batter: Overmixing the batter will make the doughnuts tough. Mix just until the ingredients are combined.
- Let the dough rise properly: The dough needs to rise twice, once after it is mixed and again after it is shaped. This will help the doughnuts to be light and fluffy.
- Fry the doughnuts at the correct temperature: The oil should be heated to 375 degrees Fahrenheit (190 degrees Celsius). If the oil is too hot, the doughnuts will brown too quickly and be raw inside. If the oil is not hot enough, the doughnuts will absorb too much oil and be greasy.
- Drain the doughnuts on paper towels: After frying, drain the doughnuts on paper towels to remove excess oil.
- Glaze the doughnuts while they are still warm: This will help the glaze to set and give the doughnuts a shiny finish.
Conclusion:
Fluffy cake doughnuts are a delicious and easy-to-make treat. By following these tips, you can make perfect doughnuts every time. Serve them for breakfast, dessert, or a snack. They are sure to be a hit with everyone who tries them.
