While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

8 sheets of aluminum foil
1 pound fresh green beans, trimmed
12 teaspoons butter, or more to taste
1 pinch seasoned salt to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface to create a double sheet. Repeat with remaining foil to make a total of 4 double sheets.
  • Place 1/4 of each of the beans on the center of each double sheet of aluminum foil; season liberally with seasoned salt. Add 3 teaspoons of butter to each bean serving and close the foil tightly to form a packet.
  • Place foil packets on the preheated grill and cook until beans are tender, 15 to 20 minutes. Remove from grill and carefully open the packets to let the hot steam evaporate.

½ pound fresh green beans, trimmed
½ tablespoon extra-virgin olive oil
kosher salt to taste
ground black pepper to taste
1 tablespoon water

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface.
  • Toss together green beans and olive oil in a bowl until coated; season with salt and pepper. Place mixture on top of the prepared sheets of foil. Add water, and bring the edges of the foil over the vegetables, sealing to create a pouch.
  • Place the foil pouch on the preheated grill and cook until beans are tender, about 15 minutes.

1 pound mixed green beans, such as string, Romano and snow peas
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 cup freshly grated Parmesan
1/2 teaspoon lemon zest

Steps:

  • Preheat a grill pan to medium high.
  • In a medium bowl, toss the beans with the olive oil and salt. Grill the beans until bright green, tender and slightly charred, 2 to 3 minutes per side. Place the grilled beans back in the bowl and toss with the Parmesan and lemon zest. Serve warm or at room temperature.

I grill just about every other night so I've tried to perfect how to cook certain vegetables along with the main course. I've found they cook to my liking when I put then on while the grill is heating up to get them going. It gives them a good 10 minutes for extreme heat before moving them aside for the main dish. They are basically roasted and steamed at the same time. Try adding some onion or tossing with lemon pepper before serving.

1 lb green beans
1 tablespoon olive oil
2 -3 garlic cloves, minced
1 teaspoon crushed red pepper flakes
salt, to taste
ground pepper, to taste
1 -2 tablespoon water
2 -3 sheets aluminum foil

Steps:

  • Put green beans on a sheet of aluminum foil large enough to fold and seal. You may need to fold two sheets together.
  • Note: I also use one sheet of foil to set the pouch on. This way if any liquid seeps out or it pulls apart it doesn't leave a mess.
  • Drizzle olive oil over the beans.
  • Add minced garlic and crushed red pepper, salt and pepper to taste.
  • Toss green beans with tongs until well coated.
  • Add water and fold aluminum foil together at the top and pinch the sides closed.
  • Cook green bean pouch on the grill.
  • Notes: When I put my main dish on the grill I open the beans and toss with tongs. If all the water is gone, add a little more, reseal and move to top rack. If I lift the grill lid to flip main dish I usually give the pouch a shake.
