Number Of Ingredients 9

3/4 lb boneless beef sirloin steak
1 Tbsp vegetable oil
1 clove garlic, minced
1 medium onion, cut into wedges
10.25 oz cream of broccoli soup
1/4 c water
1 Tbsp soy sauce
2 c broccoli flowerets
hot cooked noodles

Steps:

  • 1. Slice beef across the grain into very thin strips.
  • 2. In skillet, over medium-high heat, in hot oil, cook beef and garlic until beef is browned.
  • 3. Add onion.
  • 4. Cook for 5 minutes stirring often.
  • 5. Stir in soup, water and soy sauce. Heat to boiling.
  • 6. Add broccoli.
  • 7. Reduce to low.
  • 8. Cover, simmer for 5 minutes or until vegetables are tender.
  • 9. Serve over noodles.
  • 10. TIP: To make slicing easier, freeze beef for 1 hour.

Tips:

  • Use high-quality beef: Opt for tender cuts like sirloin or flank steak, and slice them thinly against the grain for maximum tenderness.
  • Marinate the beef: Marinating the beef in a flavorful mixture of soy sauce, rice wine, and sesame oil helps tenderize it and adds depth of flavor.
  • Use a hot wok: A well-seasoned wok is essential for achieving that perfect smoky flavor and caramelization. Heat the wok over high heat until it starts to smoke before adding the oil.
  • Cook the beef in batches: Avoid overcrowding the wok, as this will lower the temperature and result in steamed beef rather than stir-fried beef.
  • Use fresh vegetables: Fresh broccoli florets and sliced carrots add a vibrant crunch and color to the dish. Blanch the broccoli briefly to retain its bright green color.
  • Make a flavorful sauce: The sauce is key in this dish, so take the time to make a well-balanced mixture of soy sauce, oyster sauce, rice wine, and sesame oil. Add a bit of sugar or honey for sweetness and a pinch of red pepper flakes for a touch of heat.
  • Serve immediately: Beef and broccoli is a dish best enjoyed straight out of the wok, so serve it immediately over steamed rice or noodles.
