Yield Makes 16 pancakes

Number Of Ingredients 13

6 large eggs, separated
1 1/2 cups whole-milk ricotta cheese
1/4 cup (1/2 stick) unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 cup sugar
1/2 teaspoon salt
Zest of 2 large lemons
1 tablespoon poppy seeds
Vegetable oil, for griddle
Maple syrup, warmed
Berries, for garnish

Steps:

  • Place egg whites in the bowl of an electric mixer fitted with the whisk attachment. Beat until they form firm, glossy peaks.
  • In a large bowl, beat together ricotta, butter, egg yolks, and vanilla. In a medium bowl, whisk together flour, baking powder, sugar, salt, lemon zest, and poppy seeds. Using a rubber spatula, stir flour mixture into ricotta mixture.
  • Fold a large spoonful of whipped egg whites into ricotta mixture. Continue folding in remaining egg whites.
  • Coat a griddle or large skillet with oil and heat over high heat until very hot, then reduce heat to medium. Working in batches, place 1/4 cup batter for each pancake on griddle, leaving space, as they will spread. Cook until golden and top begins to bubble, about 2 minutes. Gently turn and continue cooking until bottoms are light brown. Transfer to a serving plate and keep warm until all the pancakes have cooked. Serve with maple syrup and berries.

LEMON-RICOTTA PANCAKES

If these pancakes were any lighter, they would float off the plate--and I didn't even separate the eggs and whip the whites. Also, I used water instead of milk--and I liked them better that way. I like to serve these with a pat of butter, a pinch of lemon zest, and a drizzle of maple syrup.

Yield 2

Number Of Ingredients 12

¾ cup cold water or milk
½ teaspoon baking soda
½ cup ricotta cheese
1 tablespoon grated lemon zest (just the yellow part of the skin)
1 tablespoon vegetable oil
1 tablespoon white sugar
1 large egg
⅛ teaspoon vanilla extract
2 tablespoons melted butter
1 tablespoon lemon juice
1 cup self-rising flour
2 tablespoons self-rising flour

Steps:

  • Whisk water and baking soda together in a mixing bowl. Add ricotta cheese, lemon zest, vegetables oil, sugar, egg, and vanilla. Whisk until smooth, breaking up lumps of cheese as you mix. Add melted butter, lemon juice, and 1 cup plus 2 tablespoons self-rising flour. Whisk together, stirring until most of flour disappears into the batter.
  • Let batter sit at room temperature about 15 minutes.
  • Heat lightly greased cast iron skillet or griddle over medium-high heat. Portion out 1/4 cup scoops of batter onto skillet (cook in batches). When bubbles begin to form on the surface and the edges of the pancakes start to look dry (2 to 3 minutes), flip and cook other side until cooked through, 2 to 3 minutes. Transfer to a warm plate.

Time 15m

Yield 12 pancakes, 4 serving(s)

Number Of Ingredients 7

6 eggs, separated
1 1/2 cups ricotta cheese
1/2 cup unsalted butter, melted and slightly cooled
1/2 cup flour
4 teaspoons sugar
1/2 teaspoon salt
2 lemons (grated lemon rind)

  • In a large bowl, whisk the egg yolks, ricotta cheese and butter.
  • In a small bowl, whisk the flour, sugar, salt and lemon rind. Stir the flour mixture into the ricotta mixture just until blended - batter will be thick.
  • With an electric mixer, beat the egg whites until they form stiff peaks. Gently fold the whites into the batter - don't over mix.
  • Heat a griddle or large nonstick skillet over medium heat. Pour batter onto the hot pan to form 4-inch rounds. Cook until the bottoms are golden. Turn and cook the other side.
  • Serve with fresh berries and a dusting of confectioners sugar.

Tips:

  • Use fresh lemon zest. Fresh lemon zest adds a bright, citrusy flavor to the pancakes. If you don't have fresh lemons, you can use 1 teaspoon of bottled lemon juice, but the flavor will not be as pronounced.
  • Don't overmix the batter. Overmixing the batter will make the pancakes tough. Mix the batter just until the ingredients are combined.
  • Let the batter rest for 5 minutes before cooking. This allows the batter to thicken and develop its flavor.
  • Cook the pancakes over medium heat. Cooking the pancakes over medium heat will prevent them from burning. You should see small bubbles forming around the edges of the pancakes when they are ready to flip.
  • Serve the pancakes warm with your favorite toppings. These pancakes are delicious served with butter, syrup, fruit, or whipped cream.

Conclusion:

These lemon ricotta poppy seed pancakes are a delightful treat for any occasion. They are light and fluffy, with a bright citrus flavor and a hint of poppy seeds. The ricotta cheese adds a touch of richness and creaminess, making these pancakes irresistible. Whether you serve them for breakfast, brunch, or dessert, these pancakes are sure to be a hit.
