Categories     main-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

3 tablespoons olive oil
1 pound spicy Italian sausage (about 5 links)
8 ounces bacon, sliced into 1/3-inch pieces
2 cloves garlic, minced
1 medium onion, small diced
2 cups grape tomatoes, halved
1/2 teaspoon smoked paprika
Salt
1/4 teaspoon freshly ground black pepper
3 cups low-sodium chicken broth
Two 15.5-ounce cans cannellini beans, drained and rinsed
4 sprigs fresh thyme, leaves removed and chopped
2 sprigs fresh rosemary, leaves removed and chopped
1 cup ditalini pasta or elbow macaroni

Steps:

  • Heat a 10-inch straight-sided skillet over medium-high heat. Add the olive oil and continue to heat. Pierce each sausage link twice with the tip of a pairing knife. Add the sausages to the hot pan and brown evenly on all sides, 6 to 8 minutes. Remove the sausages to a plate to cool slightly. When cool enough to handle, slice each link on the bias into 1/2-inch pieces. Set aside.
  • Reduce the heat to medium. To the hot skillet, add the bacon. Cook until it is brown and crisp. Add the garlic and onions and cook, stirring regularly, until the onions begin to soften, about 3 minutes. Add the tomatoes and cook, stirring occasionally, until the tomatoes begin to blister and break down, about 10 minutes. Add the paprika, 1/2 teaspoon salt and the pepper and cook for another 2 minutes. Add the chicken broth, drained beans, thyme and rosemary and allow the mixture to return to a simmer. Nestle the sausages back in and add any juice that may have collected on the plate. Allow the mixture to cook until the sausages are cooked through, about 10 minutes.
  • Meanwhile, in a pot of rapidly boiling salted water, cook the pasta for 8 minutes. Drain and immediately pour the cooked pasta into the bean mixture to finish cooking, about another 3 minutes.

Frank's Italian Sauce (Spaghetti Sauce) image

Provided by Food Network

Time 3h20m

Yield 16 servings

Number Of Ingredients 17

2 pounds ground beef
4 eggs
1 1/2 cups plain bread crumbs
3/4 cups grated Pecorino Romano cheese
2 garlic cloves, chopped
1/2 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon chopped fresh parsley leaves
1/4 cup olive oil
1 medium onion, chopped
1 garlic clove, chopped
1 (6-ounce) can tomato paste
2 (28-ounce) cans ground tomatoes
3/4 (28-ounce) can water (from empty ground tomato can), or 21 ounces water
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon chopped fresh parsley leaves

Steps:

  • For the meatballs: Combine all ingredients except the olive oil in a large bowl. Mix well. Form about 16 meatballs and place on a platter. Heat the olive oil in a large skillet and fry meatballs over medium heat until browned. Repeat until all meatballs are browned. Place meatballs on new clean platter. Do not discard the oil.
  • For the Gravy: In the skillet, heat the reserved oil, add the onion and garlic and saute for approximately 2 minutes. Add the tomato paste and cook on medium heat for 3 minutes, stirring constantly. Fill the empty tomato paste can full of water, add to the skillet, and cook for 1 minute, stirring. Remove from heat and set aside.
  • In an 8-quart saucepan, add the ground tomatoes and cook on medium heat for 5 minutes. Fill the empty ground tomato can 3/4 full of water and add to the saucepan, along with the tomato paste mixture from the skillet and the reserved browned meatballs. Mix thoroughly but carefully with a wooden spoon so as to not break the meatballs. Add the salt, ground pepper, and parsley and cook on medium heat for 15 minutes, then cover and cook on low heat for 2 1/2 hours, stirring every 15 minutes to prevent sticking and burning on bottom of pan. Serve over al dente pasta and sprinkle with some grated Pecorino Romano cheese, along with crusty Italian bread and a good bottle of red wine.

Tips:

  • Choose the right pasta. Different pasta shapes hold sauce differently, so choose one that will complement your sauce. For example, long, thin pasta like spaghetti or linguine is ideal for light, oil-based sauces, while short, thick pasta like penne or rigatoni is better for heartier, meat-based sauces.
  • Cook the pasta al dente. This means cooking it until it is just tender but still has a slight bite to it. Overcooked pasta will be mushy and bland.
  • Don't rinse the pasta. Rinsing the pasta will remove the starch, which helps the sauce to adhere to the pasta. If you must rinse the pasta, do so briefly with cold water.
  • Use fresh, high-quality ingredients. The better the ingredients, the better the dish will be. If you can, use fresh vegetables, herbs, and cheese.
  • Don't be afraid to experiment. There are endless possibilities when it comes to pasta dishes. Try different sauces, toppings, and combinations of ingredients to find your favorites.

Conclusion:

Pasta is a versatile and delicious dish that can be enjoyed in many different ways. With a little creativity, you can create a pasta dish that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, reach for a box of pasta and let your imagination run wild.
