FRANK'S CINNAMON KUCHEN

Frank's Cinnamon Kuchen image

This is my late father's recipe. He did not make it with fruit like a ton of other kuchen recipes that I have seen. Its a cinnamon german coffeecake that he helped sale at my hometown's annual summer festival. He was part of the Knights of St.John and this is the kuchen that they sold every year at the festival. I sometimes drizzle vanilla glaze or icing on the top, but this is my doing and not part of the original recipe. One more thing..this will NOT rise up a lot. It rises only a small bit and the dough will not fill up and touch the edges of the round cake pans.

Time 45m

Yield 18 franks

Number Of Ingredients 12

1/2 cup all-purpose flour
1/3 cup cornmeal
1 teaspoon sugar
1/4 teaspoon paprika
1 large egg, lightly beaten
1/4 cup milk
Kosher salt and freshly ground pepper
Vegetable oil, for frying
18 cocktail franks
5 to 6 cups frozen curly french fries, thawed slightly (about 1 pound)
1 tablespoon Sriracha (hot Asian chili sauce) Juice of 1/2 lime
1/4 cup mayonnaise

Steps:

  • Make the franks: Whisk the flour, cornmeal, sugar and paprika in a large bowl. Add the egg and milk and whisk to make a thick batter, adding more milk if the mixture is too dry. Add 1/4 teaspoon salt, and pepper to taste.
  • Heat about 2 inches vegetable oil in a large pot over medium-high heat until a deep-fry thermometer registers 375 degrees F. Dip the franks in the batter, then carefully wrap a long curly fry around each. (If desired, thread the franks on wooden skewers before wrapping with fries.)
  • Working in batches, fry the franks in the hot oil, turning, until golden on all sides, 3 to 4 minutes. Remove with a slotted spoon and drain on paper towels; sprinkle with salt.
  • Meanwhile, make the dip: Whisk the Sriracha, lime juice and mayonnaise in a bowl. Serve with the franks.

Yield 1 kuchen, 16 serving(s)

Number Of Ingredients 10

1/2 cup butter or 1/2 cup margarine
1/2 cup shortening
2 1/3 cups sugar
4 eggs
1 cup milk
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons ground cinnamon

Steps:

  • In a large mixing bowl, cream butter and shortening.
  • Gradually add 2 cups sugar; cream until fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Combine milk and vanilla; set aside.
  • Sift together flour, baking powder and salt;
  • add to creamed mixture alternately with milk mixture, beating just enough after each addition to keep batter smooth.
  • Combine cinnamon and remaining sugar; sprinkle 1-1/2 teaspoons into a greased 10-in. tube pan.
  • Pour 1/3 of batter into pan. Sprinkle half of remaining cinnamon/sugar; top with 1/3 of batter. Repeat with remaining cinnamon/ sugar and batter. Smooth top with spatula.
  • Bake at 350 degrees F for 1 hour and 15 minutes. Cool 10 minutes; remove from pan to a wire rack to cool thoroughly.

Tips:

  • Choose the right cinnamon: Ceylon cinnamon is considered the "true" cinnamon and has a more delicate flavor than Cassia cinnamon. It is also more expensive, so Cassia cinnamon is a good substitute.
  • Use fresh ingredients: Freshly ground cinnamon and freshly grated nutmeg will give your kuchen a more intense flavor.
  • Don't overmix the batter: Overmixing can make the kuchen tough, so mix just until the ingredients are combined.
  • Bake the kuchen in a preheated oven: This will help the kuchen rise evenly.
  • Let the kuchen cool completely before serving: This will allow the flavors to meld and the kuchen to set.
