2 tablespoons olive oil
8 links breakfast sausage, casing removed
8 large eggs, lightly beaten
1/3 cup half and half*
Kosher salt and freshly ground black pepper, to taste
1 (16-ounce) can refried beans
8 (8-inch) flour tortillas
1 cup shredded cheddar cheese

Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside. Spread beans down centers of tortillas; top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Fold in opposite sides of each tortilla, then roll up, burrito-style.* Place, seam-sides down, onto preparing baking sheet; cover. Place into oven and bake until heated through, about 12-15 minutes. Tips:

  • Choose the Right Ingredients: Opt for high-quality ingredients that freeze and reheat well, such as pre-cooked proteins, firm vegetables, and shredded cheese. Avoid ingredients with high water content that can become soggy upon reheating, such as fresh tomatoes and leafy greens.
  • Cook Fillings Thoroughly: Before assembling the burritos, ensure that all fillings are cooked to their recommended internal temperatures. This will help prevent bacteria growth and ensure food safety.
  • Wrap Burritos Tightly: To prevent freezer burn and maintain the integrity of the burritos, wrap them tightly in plastic wrap or aluminum foil before placing them in freezer-safe bags.
  • Label and Date Burritos: Clearly label and date each burrito with its contents and the date it was made. This will help you keep track of what's in your freezer and avoid consuming outdated burritos.
  • Freeze Burritos Properly: Place the wrapped burritos in a single layer on a baking sheet and freeze for about 30 minutes. This initial freezing will help prevent the burritos from sticking together. After 30 minutes, transfer the burritos to freezer-safe bags or containers and store them in the freezer for up to 3 months.
  • Reheating Burritos: When ready to enjoy, reheat the burritos in a preheated oven at 350°F (175°C) for about 20-25 minutes or until heated through. Alternatively, you can reheat the burritos in a microwave oven on high power for 2-3 minutes, checking and rotating the burritos at 30-second intervals to ensure even heating.

Meal prepping breakfast burritos is a fantastic way to save time and enjoy delicious, nutritious meals throughout the week.
