A delicious, nutritious snack - hot or cold! Leave the skins on the apples in this recipe for added colour, fibre and vitamins. Adapted from the University of Nebraska website.Makes 8 1/2 cup servings.

1/2 cup 100% apple juice
1 cinnamon stick
3 large Golden Delicious apples, skin on, diced
2 cups non-fat plain yogurt
1 tbsp vanilla

Steps:

  • Combine apple juice and cinnamon stick in a small, deep pot and bring to a boil.
  • Add apple pieces and cook 10 minutes. Drain apples, reserving 2 tbsp juice. Remove cinnamon stick and discard.
  • Reserve one cup of the drained apples, and put the rest into blender with the saved juice, one cup of the yogurt and vanilla.
  • Pulse until mostly pureed. Remove to a bowl and mix in remaining apples and yogurt.

3 cups diced apples
2 cups plain low-fat yogurt (drain off liquid)
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 teaspoons brown sugar (if apples are tart or use1-2 tsp. honey)

Steps:

  • Cook the apples in 1/2 cup water 5 to 10 minutes, or until soft.
  • Reserve one cup and put the rest into blender with one cup yogurt, vanilla, cinnamon, and brown sugar.
  • Blend very briefly.
  • Mix all ingredients together. This makes about a quart. Enjoy!

This recipe was given to me by a French foreign exchange student. It is very simple and very delicious. For the fruit, I usually use 1 banana, 1 diced and peeled apple, and some quartered strawberries, or some blueberries. You can use any combination you like.

1 cup plain yogurt
1 1/2 cups sugar
1 1/2 cups flour
2 eggs
1/4 cup oil
1 teaspoon vanilla extract
2 teaspoons rose water (optional)
2 teaspoons baking powder
2 cups fruit

Steps:

  • Mix together the yogurt and sugar.
  • Combine the baking powder and flour and add slowly to yogurt mixture.
  • Add in the eggs, oil, vanilla, and rose water.
  • Fold the fruit into the batter.
  • Bake at 300 degrees in a floured cake pan 9x13 inches. Bake for 45-55 min or until golden brown on top.
