3/4 cup milk

1 teaspoon grated orange peel
1/4 cup orange juice
1/3 cup sugar
1/4 cup orange-flavored liqueur

Steps:

  • Beat Bisquick mix, milk and eggs in small bowl with fork or wire whisk until blended. Lightly butter 8-inch skillet; heat over medium heat until bubbly. For each crepe, pour 2 tablespoons batter into skillet; immediately rotate skillet until batter covers bottom. Cook until golden brown. Run wide spatula around edge to loosen; turn and cook other side until golden brown. Stack crepes, placing waxed paper between each; keep covered.
  • Heat 1/4 cup butter, the orange peel, orange juice and sugar to boiling in 10-inch skillet, stirring occasionally; reduce heat. Simmer uncovered 5 minutes, stirring occasionally. Heat liqueur in 1-quart saucepan, but do not boil.

1/2 cup flour
3 tablespoons powdered sugar
1/4 teaspoon salt
1/2 cup milk (I use soy milk)
1 egg
vegetable oil

Steps:

  • Mix together flour, powdered sugar, and salt.
  • Add milk and eggs.
  • Mix well until smooth.
  • Heat oil in frying pan on medium/high until pan is hot (you may not need oil if you have a nonstick pan).
  • Pour about 1/4 of the mixture in the pan and turn off heat.
  • Cook until dry and then flip. Remove immediately and place on plate or serving dish.
  • Repeat.

I first made this for Girl Scout Thinking Day in 92 or 93. I made over 300 of them! Somewhere along the line I lost the cookbook, but then a friend of mine had the exact same cookbook and let me have it! I'm posting it here so I don't loose it again. I made them again for a NYE party to ring in 2011, they're just as great as I remember them! The parts can be made the day before and assembled right before needed.

3/4 cup sugar
1/2 cup flour
2 cups milk
4 eggs
2 tablespoons butter
1 teaspoon vanilla
1 (10 ounce) package frozen raspberries
1/4 cup sugar
2 tablespoons cornstarch
12 pre-made crepes

Steps:

  • For Filling:.
  • In saucepan, combine sugar and flour and stir in milk.
  • Cook over low heat, stirring constantly until thick.
  • In small bowl beat 4 eggs.
  • Stir in a small amount of hot mix into beaten eggs, then pour eggs into pan and stir.
  • Keep cooking over low heat stirring constantly for about 2 more minutes.
  • Stir in butter and vanilla and set pan aside to cool.
  • Sauce:.
  • Thaw raspberries.
  • Heat fruit to get juice started (or microwave),
  • Combine sugar and cornstarch and stir into fruit.
  • Cook over low heat, stirring until thick.
  • Cool.
  • Assemble:.
  • Put a spoonful of filing in crepe and fold in favorite pattern.
  • Top with a spoonful of warm sauce.
  • I've made all the parts a day or two before, and assembled later with great results.

Steps:

  • Amounts can be adjusted according to personal taste and the size of your crepes.
  • Cut the butter into little pieces.
  • Put 1-2 little pieces of butter into a skillet and put the crepe on top of them.
  • Scatter the rest of the little pieces of butter over the top of the crepe.
  • Let them melt a little.
  • Sprinkle the sugar over the melty butter.
  • After a few seconds, the sugar will be starting to melt into the butter a little bit but will still be somewhat granular.
  • Fold the left third of the crepe over the middle, then fold the right third over that, and let the folded crepe heat in the pan for a few more seconds.
  • Remove the crepe from the pan and eat it hot-- the sugar should be mostly melted into the butter, with a hint of pleasantly grainy sugariness at moments.

  • Combine eggs, milk, and 2 tablespoons butter in a blender. Add buckwheat flour, all-purpose flour, and a pinch of salt; puree until smooth. Allow batter to rest in the refrigerator overnight.
  • Melt 3 tablespoons butter in a large skillet over medium-high heat. Stir in cremini mushrooms and cook until golden brown, about 10 minutes. Add tomatoes and spinach; cook and stir until wilted, 3 to 4 minutes. Set the filling aside.

Fill with my recipe #480674 then roll them up crepe style. Awesome! Or, make the pancakes small and top each pancake with a heaped teaspoon of creme fraiche and a teaspoon of rose petal jam: romantic and lovely! At the table, pass around quartered lemons, powdered sugar, warmed maple syrup or my homemade lavender honey (see recipe #383209), and whipped cream accompanied with bowls of fresh berries and edible fresh flowers such as rose petals or lavender flowers. Steps:

  • Mix the flour, baking powder, salt and sugar in a bowl.
  • In a separate bowl, vigorously beat the egg yolk with the cream, melted butter and milk. Add cream mixture to the flour mixture and whisk to obtain a smooth batter. Add any optional ingredients (see variations above) at this stage, whisking to combine.
  • Let stand for 1 hour at room temperature. (Meanwhile, let egg whites come to room temperature).
  • Beat the egg whites until they form soft peaks and gently fold into the batter.
  • Heat frying pan or griddle to medium heat. Add butter or shortening (I use Crisco butter flavor shortening) to coat well.
  • Spoon equal amounts of batter onto griddle and cook until bubbles come to surface and edges look almost done.
  • Flip and cook for a few seconds more, until golden.
  • SERVING SUGGESTIONS: Serve with softened butter and warmed maple syrup, flavored syrup infusions, lavender honey, lemon wedges, fresh berries, and/or a dusting of powdered sugar. Or (my favorite!), fill pancakes with a mixture of 1 3/4 cups finely chopped walnuts, 1/2 cup sugar, and 1 1/2 teaspoons rose water, then roll up crepe style--delicious! Or, make pancakes small and top each with a dollop of creme fraiche and a teaspoonful of rose petal jam.
  • Garnish with rose petals, orange blossoms, or fresh lavender flowers.
  • TIPS:Make sure the frying pan is well greased when making pancakes. Wipe around the pan with a small wad of paper towel soaked in fat (I use butter flavored Crisco) between making each pancake.

Steps:

  • For the filling: toss the strawberries and brown sugar in a bowl and set aside.
  • For the crepes:In a medium bowl whisk flour, egg, oil, vanilla, baking powder, cinnamon, and skim milk.

No-Fail French Crepes image

This is an easy recipe that uses Bisquick! The trick is the baking mix which makes a smooth, even batter that is more forgiving than a classic recipe. Fill with anything your heart desires!

1 large egg
1 1/4 cups milk (low or nonfat is fine)
3/4 cup Bisquick, plus
1 tablespoon Bisquick (lowfat is fine)
2 tablespoons butter, as needed
2/3 cup seedless raspberry jam (or other filing, as desired)
whipped cream

Steps:

  • Heat an electric griddle to 350º, or a 12-inch nonstick skillet over medium-high heat.
  • Whisk the egg in large bowl. Whisk in the milk.
  • Add the Bisquick and whisk until there are few lumps. The batter will be thin.
  • Butter the griddle or skillet, using about 1-1/2 teaspoons of the butter.
  • Cook 2 crepes at once on griddle, or one at a time in skillet by pouring the batter by scant 1/4 cupfuls onto hot griddle.
  • Cook on the first side until the crepes begin to set and tiny bubbles appear on the surface, about 1 minute.
  • Turn and cook for another 30 seconds. Remove to a plate.
  • Repeat, butter the griddle/pan as needed, until all the batter is used.
  • Whisk jam in small bowl until smooth.
  • To assemble, spread 1 tablespoon jam over one side of each crepe. Squirt a generous amount of whip cream over the jam. Starting at that edge, gently roll up the crepe.
  • Garnich each with about 1 teaspoon of jam and dollop of cream.
  • You can also drizzle with chocolate syrup.
  • Serve at once.

I learned to make these as a young boy standing by my mother's side.(65 years ago) I make them all the time and always keep a stack of them in the freezer.

1 c all purpose flour
1-1/2 tsp cane sugar
1/4 tsp table salt
3 large eggs
3/4 c milk (regular or low fat)
1/2 c water
6 Tbsp unsalted butter, melted (3/4 stick)

Steps:

  • 1. Whisk flour, sugar and salt in a medium bowl. Place eggs, milk, water and melted butter in blender. Add all of the flour mixture into eggs a little at a time while blender is running to avoid or remove any lumps.
  • 2. Strain batter into a large glass measuring cup.
  • 3. Cover and refrigerate batter at least 1 hour to let bubbles dissipate. FOR CREPES: Have the following items available at stove-top -- crepe batter, melted butter, pastry brush, cooling rack, 7 or 8 inch diameter crepe pan, and 1/3 cup measuring cup. Heat crepe pan over medium-high heat until very hot. Brush with some melted butter. Whisk batter, then pour a scant 1/3 cup of batter into pan. Swirl batter around by tilting pan to fully coat bottom. Cook until golden brown on bottom, about 1-1/2 to 2 minutes. Flip crepe over with large flat spatula or your hands and cook second side until browned in spots, about 45 seconds. Transfer crepe to rack to cool. Brush skillet with butter (each time) and repeat process with remaining batter. (Make sure to gently stir batter every few crepes.) Once crepe has cooled, place it on a sheet of wax or parchment paper. Pile crepes on top of each other with wax/parchment paper between each. Place stack of crepes in plastic bag and refrigerate or freeze until ready to use. (If frozen, thaw in refrigerator before filling.)
  • 4. Suggested fillings: Any fruit pie filling, jelly or jam, peanut butter and sprinkle powdered sugar over top.
