One .33-ounce package strawberry popping candy, such as Pop Rocks
1 lemon wedge
2 ounces Passion Tea-Infused Gin, recipe follows
1 ounce Simple Syrup, recipe follows
1 ounce lemon juice
Very dry champagne, for topping
3 passionfruit tea bags
About 2 cups gin
1 cup sugar

Steps:

  • For the rim: Put the popping candy in a shallow dish. Rub the lemon wedge around the rim of a coupe glass, then roll the rim in the popping candy.
