Provided by Ree Drummond : Food Network

Time 30m

Yield 2 servings

Number Of Ingredients 9

3 tablespoons salted butter
1 small sweet onion, thinly sliced
1 tablespoon onion soup mix
1 tablespoon chopped fresh thyme leaves
4 teaspoons Dijon mustard
Four 1/2-inch-thick slices sourdough bread
1/2 cup grated Cheddar
1/2 cup grated Gruyere cheese
1/4 cup crispy onions, such as French's

Steps:

  • Melt 1 tablespoon of the butter in a large sauté pan over medium heat. Add the onion and cook until the slices start to wilt and turn translucent, about 3 minutes. Add the onion soup mix, thyme and 2 tablespoons water. Turn the heat to low, then continue to cook, stirring and adding more water a tablespoon at a time if the mixture gets too dry, until the onions are very soft and golden brown, 5 to 10 more minutes.
  • Melt 1 tablespoon butter in a saute pan over medium heat. Spread 1 teaspoon mustard onto one side of each slice of bread. Divide the Cheddar, Gruyere, caramelized onions and crispy onions between 2 of the slices of bread on top of the mustard. Top each with another slice of bread, mustard-side in, and lay the sandwiches in the pan. Cook, pressing down on top of the sandwiches, until the bottoms are golden brown, about 2 minutes. Add the remaining 1 tablespoon butter to the pan and flip the sandwiches, cooking until the cheese is melted and the bottoms are golden brown, about 3 more minutes. Cut in half and serve.

Categories     appetizer

Time 40m

Yield 1 serving

Number Of Ingredients 12

1/2 tablespoon grapeseed oil
1 onion, cut into thin julienne
1 clove garlic, sliced thin or minced
3 ounces brown ale
4 ounces beef stock
1 teaspoon fresh thyme leaves
1 bay leaf
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
1 ounce sharp Cheddar, sliced or shredded
1 ounce Swiss cheese, sliced or shredded
Four 1-inch-thick slices baguette, toasted

Steps:

  • In a pan over medium-low heat, heat the grapeseed oil. Add the onions and garlic and caramelize until golden brown, approximately 10 minutes. Deglaze with the beer and let it cook out for 3 to 4 minutes. Add the beef stock, thyme and bay leaf, then bring to a boil. Let simmer for 10 more minutes. Add the butter and slowly incorporate it into the broth so it thickens the broth lightly, about 2 minutes. Season with salt and pepper.
  • Preheat the broiler.
  • Fill a small ovensafe bowl with the onion mixture and cover with the Cheddar and Swiss. Melt the top under the broiler until golden, 1 to 2 minutes (or with a kitchen blowtorch). Serve with the toasted baguette.

Think French Onion soup without the soup ... fabulous appetizer for an elegant dinner or cocktail party. Recipe adapted from Jeff Pikus, Maude's Liquor Bar, Chicago.

Provided by Pinay0618

Categories     Cheese

Time 2h45m

Yield 4-6 appetizer servings

Number Of Ingredients 11

1/4 cup unsalted butter
5 lbs sweet onions, thinly sliced (about 6 onions)
1/4 cup dry sherry
1/4 cup sherry wine vinegar
1/4 cup Worcestershire sauce
2 teaspoons thyme leaves
salt & freshly ground black pepper
1 1/2 cups chicken broth, preferably homemade
2 cups coarsely grated gruyere cheese
1 teaspoon finely chopped flat leaf parsley
1 baguette, sliced and lightly toasted

Steps:

  • In a large pot, melt the butter over low heat. Add the onions and cook over low heat, stirring frequently, until they are deeply browned, about 2 hours.
  • Using a wooden spoon, stir in the dry sherry, sherry vinegar, Worcestershire, thyme and a pinch of salt and pepper. Cook over low heat until the liquid is reduced slightly, about 2 minutes. Add the chicken broth and reduce slightly, about 5 minutes.
  • Preheat the broiler. Divide the caramelized onions between two shallow, heatproof bowls or serving dishes (such as gratin dishes). Cover with the Gruyère, dividing it equally between the dishes. Broil until the cheese is bubbly and golden brown, about 4 minutes. Garnish with the parsley. Cool slightly; serve with the baguette slices for dipping.
