Number Of Ingredients 11

1 ½ cups (200 gr.) all-purpose flour
¼ teaspoon salt
¼ cup (50 gr.) granulated sugar
½ cup (1 stick, 113 gr.) cold unsalted butter, cut into small cubes
1 large egg, lightly whisked
½ cup (100 gr.) granulated sugar
1 vanilla bean, split lengthwise, seed scraped and reserved
6 ½ tbsp. (90 gr.) cold unsalted butter, cut into small pieces + more for greasing
About 2 pounds (8-10 medium sized) apples (preferable golden delicious), peeled, cored, and quartered
Whipped cream
Vanilla ice cream

Steps:

  • In a large bowl combine flour, sugar, and salt. Using your hands mix the cold butter into flour mixture until you see small pea-sized chunks. Add an egg and mix by hand until the dough comes together and looks smooth. Shape the dough into a disc. Wrap tightly in a plastic wrap. Refrigerate at least 2 hours or overnight.
  • Combine flour, sugar, and salt in a food processor. Pulse couple of time to aerate the mixture. Add cold cubed butter. Pulse a couple of times until you see coarse pea-sized crumbs. Add an egg and pulse until everything just comes together. Invert the dough onto the surface. Knead the dough until it is smooth. Shape into a flat disc. Wrap tightly in a plastic wrap. Refrigerate at least 2 hours or overnight.
  • Butter the 8.5 inches straight sided ovenproof pan generously. In a medium bowl mix sugar and vanilla bean seeds. Distribute sugar mixture evenly in the pan. Divide the butter on top of the sugar. Arrange apple slices with one cut side down in a circle motion pressing down the slices slightly.
  • On the stovetop heat the pan over the medium-high heat. Cook apples until you see bubbles. Reduce heat to medium and continue to cook until the liquid turns beautiful golden brown (caramel) color, about 10 minutes. Immediately remove from heat.
  • Preheat oven to 350 F.
  • Generously flour the surface. Hit the dough couple of times with the rolling pin in different directions. This keeps the dough from cracking. Roll out the dough. With the sharp knife cut the circle slightly bigger in diameter than the pan. Arrange the dough over the caramelized apples. !Carefully tuck the edges of the dough between the apples and the pan on all sides.
  • Bake tatin in the oven until the dough turns golden brown color, about 45-50 minutes.
  • Remove from oven and let it cool slightly about 5 minutes.

100.00 g caster sugar

Steps:

  • Preheat the oven to 180 °C (convection). Wash and peel the apples. Cut them in half and use the tip of a paring knife to core them.
  • In a 10-inch cake pan, melt the butter over low heat. When it starts to foam, pour the sugar over it and allow to cook over low heat without stirring until it turns a light caramel color.
  • Remove from heat and arrange the apple halves in a ring pattern in the pan, cut side down. Return to the stove and cook over low heat for 10 minutes more. When cooking is complete, lightly press down on the apples with a spatula.
  • Split the vanilla bean in half lengthwise and use the tip of a knife to remove the seeds. Sprinkle them over the apples. Do the same with the cinnamon. Turn off the heat. 1 cup sugar
1 teaspoon lemon juice
1 stick unsalted butter
1 sheet frozen puff pastry, thawed and chilled

  • Preheat the oven to 400 degrees F. Mix the sliced apples together with 1/2 cup of the sugar and the lemon juice in a large bowl and set aside. The lemon juice will give flavor as well as keep your apple wedges from oxidizing. Melt the butter in a 12-inch nonstick ovenproof skillet over medium-high heat and sprinkle the remaining 1/2 cup sugar evenly over the melting butter. For the caramel
sugar - 1 cup
butter - 0.9 oz (25 g)

Steps:

  • In a bowl sift the flour and cut the cold butter into cubes. Add salt, vanilla sugar and sugar.

Classic French apple tart. I make this every fall during apple season, usually end up with the recipe memorized as I'm churning out my 14th, or 15th, tarte by the end of the year. Use tart Granny Smiths for best results. Use store-bought puff pastry to make it super easy! I found this method by trial and error to bypass making caramel first. (At the suggestion of my friends 2Bleu, a note about traditional tarte tatin: The traditional tarte tatin starts by making caramel in a cast-iron skillet first, then cooks the apples in the caramel on the stovetop, then has you make a crust like a pie crust, which gets placed on top of the apples, then the whole thing is moved into the oven. It's delicious, but a tedious method. So I played around in the kitchen until I discovered this method by a wonderful accident! Don't you love when that happens? ;-) )
