SWEET FRENCH ONION SOUP
Adapted a couple french onion soups to create an original recipe. Friends and family often request me to make this soup. It's a huge hit everywhere I take it. It's super simple but super delicious. Often recipes list a wine and say that you can substitute another wine if you don't have the one listed. For this recipe, however, the Riesling wine is KEY to it's flavor. I strongly suggest sticking with it for this recipe.

Tips:

- Caramelize the onions slowly and patiently: This is the key step in making this soup. It takes time and patience to get the onions nice and brown, but it's worth it. The caramelized onions will give the soup a rich, sweet flavor.
- Use a good quality beef broth: The beef broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is made with real beef bones and has a rich flavor.

- Serve the soup with a baguette or croutons: This is the perfect way to soak up all of the delicious soup. You can also top the soup with a dollop of sour cream or crème fraîche.
