SUN-DRIED TOMATO CREAM SAUCE

Sun-Dried Tomato Cream Sauce image

I'm in heaven when I have this. It's so rich & creamy. The success to this recipe relies on the sun-dried tomatoes. I find Unico's julienned cut sun-dried tomatoes packed in oil are the best. Make sure to pick a jar that the sun-dried tomatoes are still bright red, not brown.

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 tablespoons olive oil
1 red onion
4 -6 garlic cloves
1 tablespoon italian seasoning
1 teaspoon red chili pepper flakes
1 tablespoon sugar
1 tablespoon balsamic vinegar
0.5 (6 ounce) can tomato paste
1 (28 ounce) can whole tomatoes
5 -6 sun-dried tomatoes packed in oil, chopped
fresh basil, Chopped
salt and pepper

Steps:

  • Sautee onions and garlic in olive oil until soft.
  • Add Italian seasoning, chile flakes, sugar, balsamic vinegar, salt and pepper and cook for a few minutes.
  • Add tomato paste and sundried tomatoes and cook for a few minutes.
  • Add can of tomatoes and break up with spoon.
  • Puree with a hand blender.
  • Cook for 1-2 hours on low heat, stirring occasionally.
  • Remove from heat and add Basil.
  • Adjust seasoning.
  • Serve over pasta.

Tips:

  • Use ripe, flavorful tomatoes. This will ensure that your sauce is packed with flavor. If you're using fresh tomatoes, make sure they're nice and red and juicy. If you're using sun-dried tomatoes, make sure they're plump and not too dry.
  • Don't skimp on the olive oil. Olive oil is what gives tomato sauce its rich, velvety texture. Be generous with it, and don't be afraid to add more if needed.
  • Use fresh herbs. Fresh herbs, like basil, oregano, and thyme, will add a ton of flavor to your sauce. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they're more concentrated.
  • Simmer your sauce for at least 30 minutes. This will allow the flavors to develop and deepen. The longer you simmer your sauce, the better it will taste.
  • Taste your sauce as you go and adjust the seasonings accordingly. You may need to add more salt, pepper, or herbs to taste.

Conclusion:

Tomato sauce is a versatile and delicious sauce that can be used in a variety of dishes. It's perfect for pasta, pizza, chicken, fish, and vegetables. With a few simple ingredients and a little bit of time, you can make a homemade tomato sauce that's far superior to anything you'll find in a jar. So next time you're looking for a quick and easy meal, reach for a pot of tomato sauce. You won't be disappointed.
