FRESH APPLE NUT CAKE

Fresh Apple Nut Cake image

This is a moist and delicious cake. No spices to take away from the fresh apple taste. It stays moist but just doesn't last very long at my house. This recipe comes from my mother. She clipped it out of a newspaper a long time ago. It's been a favorite ever since.

2 cups sugar
1 1/2 cups vegetable oil
3 eggs
3 cups sifted plain flour
3 cups diced peeled apples
1 cup chopped pecans
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon salt

  • Bake for 1 1/2 hours at 325 degrees.
  • Cool five minutes in pan.

Tips:

  • Choose the right apples. Use firm, tart apples like Granny Smith or Honeycrisp for a cake with a balanced flavor. Sweeter apples like Red Delicious or Golden Delicious can also be used, but the cake may be too sweet.
  • Don't overmix the batter. Overmixing can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Let the cake cool completely before frosting. This will help the frosting set properly.
  • Store the cake at room temperature for up to 3 days. You can also freeze the cake for up to 2 months.
