2 teaspoons chopped fresh thyme leaves
1/4 cup chopped fresh parsley
3 tablespoons dry milk
2 tablespoons sugar
1 teaspoon salt

2 pounds (6 cups) very small cherry tomatoes, halved
1/4 cup olive oil
4 shallots, minced
2 teaspoons balsamic vinegar
1/4 teaspoon dried crushed red pepper
2 tablespoons chopped fresh marjoram
2 1-pound ciabatta breads, halved horizontally
Additional olive oil
Additional chopped marjoram

Steps:

  • Preheat oven to 375°F. Mix tomatoes, 1/4 cup oil, shallots, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Roast uncovered until tomatoes are very tender and juicy, stirring occasionally, about 45 minutes. Stir in 2 tablespoons marjoram. Season with salt and pepper. (Can be prepared 1 day ahead. NIF'S CHEESY FRESH HERB AND GARLIC BREAD

I came up with this because I had some fresh herbs on hand and wanted to make garlic bread. This is what I got! You can also use a teaspoon of each kind of dried herbs if you don't have fresh, but it won't be quite the same. Also, use whatever cheese you have on hand - this is just what I had. 1 large loaf crusty bread
1/2 cup mayonnaise (I use half fat Hellmann's)
1/4 cup butter, room temperature
2 fresh garlic cloves, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh basil, finely chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon green onion, thinly sliced
salt and pepper
1 cup low-fat cheddar cheese, grated
1/2 cup part-skim mozzarella cheese, grated
1/2 cup fresh parmesan cheese, grated

Steps:

  • Cut bread in half horizontally. Open loaf.
  • Mix mayo, butter, garlic, rosemary, basil,parsley, green onion, salt and pepper.
  • Mix cheeses together in a bowl. Put half of the cheese mixture in the mayo mixture and stir.
  • Spread half of the mayo mixture on each half of the loaf. Sprinkle remaining cheese on top.
  • I placed this over indirect heat in my BBQ for about 20 minutes, until heated through and the cheese was melted. I was cooking the steak on the other half of the BBQ so it was easy to keep an eye on it.
  • You could bake this in the oven at 350F, but I didn't want to list how long you would bake it for because I didn't make it that way. I would guess 15 minutes.

1 cup warm water (110 degrees F/45 degrees C)
1 tablespoon honey
1 ½ teaspoons active dry yeast

2 ¼ cups white spelt flour
⅔ cup whole grain spelt flour
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh basil
1 teaspoon dried Italian herb blend
¼ teaspoon freshly cracked black pepper

  • Combine water, honey, and yeast in a large bowl. Stir to combine, then let sit until frothy, about 10 minutes.
  • Add oil and salt to yeast mixture, then stir in both flours, rosemary, basil, Italian herb blend, and pepper until dough pulls away from the sides of the bowl. Do not knead, as dough will be too sticky.
  • Cover, and let rise until nearly doubled in size, about 45 minutes.

  • Use a spatula to scoop dough into the prepared loaf pan.
